Description
(a)モグロシドVを含む羅漢果抽出物;
(b)レバウジオシドA;及び
(c)レバウジオシドB
で構成される甘味料組成物であって、
ここで、羅漢果抽出物、レバウジオシドA及びレバウジオシドBは、羅漢果抽出物:(レバウジオシドA+レバウジオシドB)の重量比が51:49〜99:1で存在し;
モグロシドV及びレバウジオシドAは、41:59〜99:1のモグロシドV:レバウジオシドAの重量比で存在し;並びに
レバウジオシドBは、甘味料組成物の味を改善するのに有効な量で存在する上記甘味料組成物を提供する。
(a)45〜55重量%のモグロシドVを含む羅漢果抽出物;
(b)レバウジオシドA;及び
(c)レバウジオシドB
で構成される甘味料組成物であって、
ここで、羅漢果抽出物、レバウジオシドA及びレバウジオシドBは、羅漢果抽出物:(レバウジオシドA+レバウジオシドB)の重量比が55:45〜80:20で存在し;
モグロシドV及びレバウジオシドAは、45:55〜65:35のモグロシドV:レバウジオシドAの重量比で存在し;並びに
レバウジオシドBは、(a)、(b)、(c)と、存在する任意の付加的なステビオールグリコシドの全重量を基準にして、少なくとも5重量%の量で存在する前記甘味料組成物を提供する。
(a)45〜55重量%のモグロシドVを含む53〜68重量%の羅漢果抽出物;
(b)26〜35重量%のレバウジオシドA;及び
(c)6〜12重量%のレバウジオシドB
で構成され、ここで、(a)、(b)及び(c)が全体として100%である[すなわち、(a)の重量%+(b)の重量%+(c)の重量%=100%]甘味料組成物を提供する。
甘味料ブレンド1〜3は、異なるレベルのレバウジオシドB(80%純度、少量のレバウジオシドAを含む)を羅漢果抽出物とステビア製造物の混合物に組み込むことによって調製された。ここで、羅漢果抽出物とステビア製造物は様々な比率でブレンドした。羅漢果抽出物は、Tate & Lyleから入手可能なPUREFRUIT(商標)であり、50重量%のモグロシドVを含有した。ステビア製造物は、約71重量%のレバウジオシドAと25重量%のステビオシドを含有する市販の製造物であった。甘味料ブレンド1〜3のそれぞれのモグロシドV、レバウジオシドA、ステビオシド及びレバウジオシドB含量(重量%)を以下の表1に示す。
甘味料ブレンド4は、75重量部のPUREFRUIT(商標)Select[Tate & Lyleから市販されているLuo Han Guo(羅漢果)、50重量%のモグロシドVを含有し、残りは主に他のモグロシドである]、19.5重量部のレバウジオシドA、及び5.5重量部のレバウジオシドBを組み合わせることによって調製された。甘味料ブレンド4は、37.5重量%のモグロシドV、19.5重量%のレバウジオシドA、及び5.5重量%のレバウジオシドBを含有した。したがって、レバウジオシドAとレバウジオシドAの重量比は78:22であり、モグロシドVとレバウジオシドAの重量比は65.8:34.2であり、羅漢果抽出物と(レバウジオシドA+レバウジオシドB)の重量比は75:25であり、モグロシドVとレバウジオシドBの重量比は87.2:12.8であった。
Claims (8)
- (a)ともに乾燥重量を基準にして、45〜55重量%のモグロシドVを含む53〜68重量%の羅漢果抽出物;
(b)乾燥重量を基準にして、26〜35重量%のレバウジオシドA;
(c)レバウジオシドB;及び
(d)任意選択的に付加的なステビオールグルコシド
を含む甘味料組成物であって、
ここで、羅漢果抽出物、レバウジオシドA及びレバウジオシドBは、羅漢果抽出物:(レバウジオシドA+レバウジオシドB)の重量比が、乾燥重量を基準にして、55:45〜80:20で存在し;
モグロシドV及びレバウジオシドAは、45:55〜65:35のモグロシドV:レバウジオシドAの重量比で存在し;
レバウジオシドA及びレバウジオシドBは、65:35〜90:10のレバウジオシドA:レバウジオシドBの重量比で存在し;並びに
レバウジオシドBは、乾燥重量を基準にして、(a)、(b)、(c)及び(d)の全重量を基準にして、6〜12重量%の量で存在し、ここで、(a)、(b)、(c)及び(d)が全体として100%であり、
レバウジオシドBは、羅漢果とステビアの抽出物由来の高力価の甘味料のブレンドであり、羅漢果抽出物、レバウジオシドA、ステビオシドと他のステビオールグリコシドを含有するが、レバウジオシドBは含まない甘味料と比較して、甘味料組成物の味を改善する、上記甘味料組成物。 - 羅漢果抽出物:(レバウジオシドA+レバウジオシドB)の重量比が60:40〜75:25である、請求項1に記載の甘味料組成物。
- レバウジオシドA及びレバウジオシドBが、70:30〜85:15のレバウジオシドA:レバウジオシドBの重量比で存在する、請求項1又は2に記載の甘味料組成物。
- ステビオシドを含まない、又は(a)、(b)、(c)及び(d)の全重量を基準にして、最大10重量%の量のステビオシドを含む、請求項1〜3のいずれか1項に記載の甘味料組成物。
- (a)乾燥重量を基準にして、45〜55重量%のモグロシドVを含む羅漢果抽出物;
(b)レバウジオシドA;
(c)レバウジオシドB;及び
(d)任意選択的に付加的なステビオールグルコシド
を含む甘味料組成物であって、
ここで、羅漢果抽出物、レバウジオシドA及びレバウジオシドBは、羅漢果抽出物:(レバウジオシドA+レバウジオシドB)の重量比が、乾燥重量を基準にして、55:45〜80:20で存在し;
モグロシドV及びレバウジオシドAは、45:55〜65:35のモグロシドV:レバウジオシドAの重量比で存在し;
レバウジオシドA及びレバウジオシドBは、65:35〜90:10のレバウジオシドA:レバウジオシドBの重量比で存在し;並びに
レバウジオシドBは、乾燥重量を基準にして、(a)、(b)、(c)及び(d)の全重量を基準にして、少なくとも6重量%の量で存在し、ここで、(a)、(b)、(c)及び(d)が全体として100%であり、
レバウジオシドBは、羅漢果とステビアの抽出物由来の高力価の甘味料のブレンドであり、羅漢果抽出物、レバウジオシドA、ステビオシドと他のステビオールグリコシドを含有するが、レバウジオシドBは含まない甘味料と比較して、甘味料組成物の味を改善する、上記甘味料組成物。 - (a)両範囲が乾燥重量を基準にして、45〜55重量%のモグロシドVを含む55〜68重量%の羅漢果抽出物;
(b)乾燥重量を基準にして、26〜35重量%のレバウジオシドA;及び
(c)乾燥重量を基準にして、6〜12重量%のレバウジオシドB
を含み、ここで、(a)、(b)及び(c)が全体として100%であり、レバウジオシドBは、羅漢果とステビアの抽出物由来の高力価の甘味料のブレンドであり、羅漢果抽出物、レバウジオシドA、ステビオシドと他のステビオールグリコシドを含有するが、レバウジオシドBは含まない甘味料と比較して、甘味料組成物の味を改善する、甘味料組成物。 - (a)ともに乾燥重量を基準にして、45〜55重量%のモグロシドVを含む53〜68重量%の羅漢果抽出物;
(b)乾燥重量を基準にして、26〜35重量%レバウジオシドA;
(c)レバウジオシドB;及び
(d)任意選択的に付加的なステビオールグルコシド
を含む甘味料組成物を製造するための方法であって、該方法は、モグロシドVで構成される羅漢果抽出物と、一定量のレバウジオシドA、及び(a)、(b)、(c)及び(d)の全重量を基準にして、少なくとも2重量%の量のレバウジオシドBとを合わせることを含み、レバウジオシドBは、羅漢果とステビアの抽出物由来の高力価の甘味料のブレンドであり、羅漢果抽出物、レバウジオシドA、ステビオシドと他のステビオールグリコシドを含有するが、レバウジオシドBは含まない甘味料と比較して、甘味料組成物の味を改善する、上記方法。 - 少なくとも1つの食品成分又は飲料成分と、請求項1〜6のいずれか1項に記載の甘味料組成物を含む食品又は飲料組成物。
