Abstract

Disclosed is a composition made up of xylitol and stevia extract for use as a natural, low calorie sweetener. Also disclosed are uses of the composition in food and beverages.
The composition allowing for the degree of sweetness to be more easily controlled and without having a bittertaste.

Description

NATURAL, LOW CALORIE SWEETENER
FIELD OF THE INVENTION
[0001] The present invention is generally directed towards natural, low calorie sweeteners. More specifically, the present invention is directed to low calorie sweeteners containing stevia extract and xylitol.
BACKGROUND OF THE INVENTION
[0002] Stevia extract is a natural sweetener extracted from the leaves of the plant Stevia rebaudiana. The stevia extract comprises steviol glycosides that have been reported to be 200-300 times sweeter than sucrose (Goyal et al. 2010). Stevia extract does not induce a glycemic response once ingested, so is often used by diabetics and those on carbohydrate-reduced diets.
[0003] However, in addition to sweetening food and beverages, the steviol glycosides give a bitter aftertaste (Goyal et al. 2010). In addition, due to the fact that steviol glycosides are several times sweeter than sucrose, it can be difficult to control the degree of sweetness conferred on food and beverages when stevia extract is added. As such, a small amount of stevia can alter the sweetness of the food or beverage dramatically.
[0004] Xylitol is a sugar alcohol found in the fibres of many fruits and vegetables. It can also be made synthetically from the compound xylan. Xylitol is approximately 70% as sweet as sucrose on a weight basis (Glaser et at. 2000) and has approximately one third fewer calories (Granstrom et al. 2007). However, xylitol can cause gastrointestinal disturbances, which are dose-dependent.
[0005] Thus, there is a need for a sweetener that has fewer calories than sucrose, is easy to handle in order to control the degree of sweetness added to food, does not have a bitter aftertaste and does not cause gastrointestinal disturbances in the amount required to reach the desired sweetness.

SUMMARY OF THE INVENTION
[0006] According to one aspect of the present invention, there is provided a composition containing 90-99% w/w xylitol and 1-10% w/w stevia extract.
[0007] In a further embodiment, the stevia extract is rebaudioside A.
[0008] In yet a further embodiment, the stevia extract rebaudioside A 97%
is combined with xylitol 99% in the following proportions: 0.035 g rebaudioside A
97% to 0.96 g xylitol.
[0009] The composition can be used for baking and desserts as it is chemically stable at high heat. It is also suitable to be used by diabetics and those on carbohydrate-reduced diets.
DESCRIPTION OF THE INVENTION
[0010] The following description is of one particular embodiment by way of example only and without limitation to the combination of features necessary for carrying the invention into effect.
[0011] A composition to sweeten foods and beverages is described. The composition contains:
(a) A steviol glycoside. In one embodiment, the steviol glycoside is rebaudioside A 97%, in a weight percentage of, for example, 1-10% w/w, preferably about 3.5% w/w; and (b) A polyalcohol (or sugar alcohol). In one embodiment, the polyalcohol is xylitol 99%, in a weight percentage of 90-99%, preferable about 96.5% w/w.
[0012] The resulting composition is a homeogenous white powder which delivers a sweet taste to food with few calories (4 kcal/g). Using the composition as opposed to stevia extract, it is easy to control the degree of sweetness in foods and beverages.
1.8 g of the resulting composition confers the same degree of sweetness to a food or beverage as 2 teaspoons of sucrose. Further, unlike stevia, there is no bitter aftertaste that results from the addition of the composition to food or beverages.
[0013] Foods to which the composition of the invention can be added include, but are not limited to: fruits, baking, desserts, cereals and sauces. Beverages to which the composition of the invention can be added include, but are not limited to:
coffee, tea, juice, soft drinks and alcoholic beverages.
[0014] It will be understood that numerous modifications will appear to those skilled in the art. Accordingly, the above description should be taken as illustrative of the invention and not in a limiting sense. It will further be undertood that it is intended to cover any variations, uses or adapations of the invention following, in general, the principles of the invention and including such departures from the present disclosure as come within known or customary practice within the art to which the invention pertains and as may be applied to the essential features herein before set forth, and as follows in the scope of the appended claims.
EXAMPLES
[0015] A composition of the invention containing 0.035 g stevia extract REB A 97%
and 0.96 g xylitol 99% was analyzed and found to have the following chemical properties:

Claims (16)

1. A composition comprising 90-99% w/w xylitol and 1-10% w/w stevia extract.
2. A composition comprising 92-98% w/w xylitol and 2-8% w/w stevia extract.
3. A composition comprising 94-98% w/w xylitol and 2-6% stevia extract.
4. A composition comprising 95-98% w/w xylitol and 2-5% stevia extract.
5. A composition comprising 96-97% w/w xylitol and 3-4% stevia extract.
6. A composition comprising about 96.5% w/w xylitol and about 3.5% stevia extract.
7. The composition as claimed in any one of claims 1-6 wherein the stevia extract is rebaudioside A.
8. Use of the composition as claimed in any one of claims 1-7 as a sweetener in foods or beverages.
9. A food or beverage additive comprising 90-99% w/w xylitol and 1-10% w/w stevia extract.
10. A food or beverage additive comprising 92-98% w/w xylitol and 2-8% w/w stevia extract.
11. A food or beverage additive comprising 94-98% w/w xylitol and 2-6%
stevia extract.
12. A food or beverage additive comprising 95-98% w/w xylitol and 2-5%
stevia extract.
13. A food or beverage additive comprising 96-97% w/w xylitol and 3-4%
stevia extract.
14. A food or beverage additive comprising about 96.5% w/w xylitol and about 3.5%
stevia extract.
15. The food or beverage additive as claimed in any one of claims 9-14 wherein the stevia extract is rebaudioside A.
16. Use of the food or beverage additive as claimed in any one of claims 9-15 as a sweetener.
