Claims (1)
- 砂糖35%〜40%、米の粉0.28%〜0.32%、寒天1.7%〜2.5%に水150%〜200%を混合し、これを105℃未満で加熱溶融沸騰し、米粉がα化し、全体が透明になった後、餡35%〜53%及び摺り潰した生山芋10%〜20%及び水飴0.7%〜0.8%を添加して、105℃未満で加熱沸騰して均一粘稠物とし、この粘稠物を容器に移して冷却固化することを特徴とした山芋羊羹の製造方法。
