Abstract
【解決手段】 この発明は、砂糖・米の粉及び寒天とゲル化糖の単独または混合物適量と水を混合し、これを加熱溶融沸騰した後、餡及び生山芋を混入すると共に、水飴を添加し加熱沸騰して得た均一粘稠物を、容器又は型に移して冷却固化することを特徴とした山芋羊羹の製造方法により目的を達成した。

Claims (4)
- 生山芋を含むことを特徴とした山芋羊羹。
- 米の粉及び山芋を含むことを特徴とした山芋羊羹。
- 砂糖・米の粉及び寒天又はゲル化糖の単独又は混合物の適量と水とを混合し、これを加熱溶融沸騰した後、餡及び生山芋を混入すると共に、水飴を添加し、加熱沸騰して得た均一粘稠物を、容器に移して冷却固化することを特徴とした山芋羊羹の製造方法。
- 使用材料の配合量は、砂糖35%〜40%、米の粉0.28%〜0.32%、寒天1.7%〜2.5%、餡35%〜53%、山芋10%〜20%、水飴0.7%〜0.8%及び水150%〜200%としたことを特徴とする請求項3記載の山芋羊羹の製造方法。
