Abstract
Description
キムチの塩分(ナトリウム)を減らすための研究は大きく二つに分けられる。
本発明の最大特徴は野草粉末をキムチ製造に用いる点にある。野草の中でもカリウム成分を多量含有しながらも塩素を含まなくて、キムチを製造する際に代替塩として使用可能な野草は、代表的に蒲公英、よもぎ、あざみ、九節草、菊芋などがある。これらの野草を採取して以下の工程段階を行うことにより粉末を用意する。上記野草以外にも唐杜沖、きゅうり、サンチュ、茄子、薩摩芋などもカリウムが多量含有された植物であるので本発明を実施する際に採択可能である。
上述したように、本発明のキムチソック薬念とまぶせられる材料として用いられる野草成分は蒲公英、あざみ、よもぎ、唐杜沖、桑、菊芋などが代表的である。
採取された野草は常温(10℃〜20℃)で、3〜15日間乾燥した陰地で乾かす。湿気があるとかびの生ずる虞があり、また、一面のみ乾かすと裏面にかびが生ずるので留意してほしい。そこで、一日2〜3回野草を裏返しながら乾燥しなければならない。
上記1次乾燥した野草の中で摂取できない部分を取り除く選別作業をした後、これを切断する。大きさは特に限定されないが、以下の2次乾燥工程で水分の除去が容易になるように、横縦がそれぞれ数mm〜3cm以下に切断することが好ましい。
上記切断した野草を熱風によって乾燥させる。40〜55℃で40〜60時間熱風装置によって乾燥する。乾燥時間は上記温度領域で低い領域の場合長期間乾燥させることが好ましい。
粉砕機によって上記乾燥された野草を粉末化して、キムチソック薬念と一緒にまぶす材料を用意する工程である。粉末状態では水分を吸収しやすいので、あまり多い量を予め粉末化しておくと、かびが生ずるのでこのことを留意すべきである。
本発明のキムチソック薬念と一緒にまぶせる材料として利用される野草成分は、蒲公英、よもぎ、唐杜沖、菊芋などで、カリウム成分が多量に含有され、これらそれぞれの粉末を混合する。その他あざみなどの野草も使用可能である。これら粉末の混合比は多様に選択可能であり、好ましい割合は以下の表3の通りである。
まず、白菜をセディメントフィルターを通じて砂及び残物を取り除いた後カーボン(carbon)フィルターを通じて臭い因子を取り除く。
出汁用野草を利用して出汁を製造する。出汁用野草として葦のつるなどを用い、それぞれ白菜乾燥重量の5〜10%、アミエビ、カタクチイワシ、昆布、大根、長ねぎを水に入れて出汁を出す。この時、出汁用材料と水の割合は約1:2が好ましいが、必ずこの割合に限らない。
キムチソック薬念の材料としては通常のキムチ用薬念を用いることができる。即ち塩辛、たまねぎ、生姜、ニンニク、長ねぎ、大根、砂糖などを用いる。これに対しては公知技術であるので詳細な説明は省略する。
上記用意した漬け白菜に上記用意した混合薬念をまぶせる工程である。
キムチの味を左右する醗酵は嫌気性であるリューコノストック乳酸菌の増殖によって行われる。この乳酸菌は零下1℃の温度で1ml当たり最大6千万匹が増殖し、この過程で有害菌をなくす。最適な醗酵環境を提供するために、キムチ冷蔵庫を利用することができ、その外にも陰地に穴を掘って内部にわらを敷いた後、伝統陶器を埋める方式が醗酵のためにより好ましい。当然、嫌気性乳酸菌の特性上、空気との接触を最大に阻まなければならない。
蒲公英(Taraxacum:Dandelion)は菊科に属する多年生草本で、花、葉、根など植物体の全てを薬用とすることができる数少ない薬草と知られている。(生薬学校再編纂委員会2001)。蒲公英は浮腫、解熱、黄疸、癲癇、婦人病などの薬剤として用いられ、ヨーロッパでも貴重な薬草として認められて、便秘、リュウマチ、夜盲症などに利用されている。
九節草は5月端午には茎が5節になり、旧暦9月9日になると9節になることから九節草と呼ばれる。九節草は菊科植物の中で小菊であり、茎の末端に花が一輪だけ咲き、薬理効果が非常に良い植物である。九節草の香りは夜の間の部屋の中の混濁した空気を浄化させ、九節草の気運が肌と呼吸器官を通じて体の中に染みこんでアロマテラピー効能を発揮する。特に頭痛、眩暈、解熱、解毒、不眠症、高血圧、風症に良いと知られており、体の中の毒素を取り除いて癌細胞の抑制機能もある。また、体の中の冷え症を治療して婦人病である生理不順、生理痛症状を緩和させる。
菊芋は植物の中でイヌリン成分が最も多く含有されていて、天然インシュリンと評価されている。その外にもビタミンとミネラルが豊かに含有されている。
あざみの成分の中でシリマリンは上記蒲公英に対する効能のように肝臓疾患剤として用いられている。このようなシリマリン成分は動物の肝臓のミトコンドリア及びミクロソームでの過酸化物質の生成を抑制し、四塩化炭素による毒性に対する保護作用も発揮する。その他、利尿、解毒、消炎作用があり、タラキサステロールアセテート、スチグマステロール、アミリンなどによる血液循環の改善作用及び打撲傷や腫物、浮腫を含めた悪性腫瘍にも効果があると知られている。
よもぎは、菊科に属する多年生草で、その性質が暖かくて虚汗性の出血病症、月経痛、腹痛などに効果があると知られている。また、抗癌作用をする葉緑素と植物性繊維、良質のミネラルとビタミンが豊かに含有されており、幼い葉は食用として用いる。薬用植物辞書にも、よもぎは、カルシウム、繊維質、ビタミンA、ビタミンB、ビタミンCなどをたくさん含有されており、特に春の肌乾燥、呼吸器疾患及び各種アレルギー症状にも卓越な効果を発揮すると記載されている。
Claims (4)
- 高カリウム、低ナトリウム、低塩素キムチを製造する方法において、
野草である蒲公英、九節草、菊芋を粉末化させる工程(野草粉末化工程)と;
白菜を用意し、塩漬けにする工程と;
塩、唐辛子、塩辛を含んだキムチソック薬念の用意工程と;
前記キムチソック薬念と前記野草粉末との混合工程と;
前記キムチソック薬念と前記野草粉末の混合薬念を白菜にまぶす工程と;
前記混合薬念がまぶされた白菜を熟成、醗酵させる工程と;を含み、
前記粉末化された野草は、蒲公英1:九節草0.1〜2.5:菊芋0.1〜2.5の重量比で用意し、乾燥白菜の重量に対し前記野草粉末の総和は3〜10重量%で混合され、
前記野草粉末は、
野草採取段階(S110)と;
それぞれの野草に対して別途に分離した後、10℃〜20℃の常温で3日〜15日間乾燥させる1次乾燥工程(S120)と;
前記1次乾燥した野草を数mm〜3cm以下に切断する野草切断工程(S130)と;
前記切断した野草を40〜55℃の熱風で40〜60時間乾燥する2次乾燥工程(S140)と;
前記2次乾燥した野草を、1mm以下に破砕して粉砕する粉末化工程(S150)と;
前記粉末野草を混合する工程(S160)とを含むことを特徴とする、野草を利用した低ナトリウム、低塩素、高カリウムキムチ製造方法。 - 前記キムチソック薬念用意工程では、キムチの中の塩の含有量がキムチの全重量の0.3〜1.5重量%範囲で配合されることによって、キムチの構成成分において、カリウムに対するナトリウム成分の重量の割合が1.0未満になるようにキムチソック薬念を用意し、
前記白菜の用意及塩漬け工程では、セディメントフィルターを通じて砂及び残物を取り除いた後、カーボン(carbon)フィルターを通じてにおい因子を取り除き、その後、UFフィルターを通じてミネラルを除いた重金属が除去された海水を白菜が浸るほどに容器に注いだ後、約20℃の常温で15〜30時間漬ける作業をすることを特徴とする、請求項1に記載の野草を利用した低ナトリウム、低塩素、高カリウムキムチ製造方法。 - 野草を利用した低ナトリウム、低塩素、高カリウムキムチにおいて、

前記野草粉末は、蒲公英1:九節草0.1〜2.5:菊芋0.1〜2.5の重量比で混合され、乾燥白菜の重量に対し前記野草粉末の総和は3〜10重量%で混合され、
前記野草粉末の用意は、
野草採取段階(S110)と;
