Abstract

L'invention concerne un procédé de préparation de produits alimentaires et de boissons contenant des bifidobactéries, par culture de bifidobactéries obligatoirement anaérobies dans un milieu de lait ou semi-synthétique et par traitement approprié de la culture ainsi obtenue. Suivant ce procédé, on effectue une culture mixte de souches de mutants de Bifidobacterium, résistant à l'oxygène, avec des Bifidobactéries obligatoirement anaérobies. On peut ainsi effectuer la culture dans des conditions aérobies.
