恰玛古是新疆维吾尔族吃了2000多年的一种富碱植物,中药名为芜菁或蔓菁,又俗称大头菜、诸葛菜、圆菜头。其为十字花科芸薹属的草本植物,富含有机活性碱等多种有机营养物质,生产在新疆天山南部等地,是新疆各族人民普遍食用的一种蔬菜。恰玛古能形成肉质根,以肥大肉质根供食,其花、根、种子还可入药。由于其长期服用可润肺解毒、清肝明目、填精壮肾、通便利尿、生发美容、筋骨强健、百病不生,因此又有长寿圣果的美称。
新疆当地人民有一种恰玛古的吃法,是将其晒干磨成粉然后与面粉掺杂制成面食,从而食用的面食具有恰玛古的香味。但是,这种食用方法往往恰玛古制成粉与面粉混合的过程非常麻烦,当地人民希望能够有一种已经完成恰玛古和面粉混合的配方面粉。
发明内容
本发明所要解决的技术问题是提供一种恰玛古配方面粉及其生产工艺,以解决目前新疆当地人民对含有恰玛古面粉需求,但是制作这种面粉过程又非常繁琐的问题。
为了实现上述目的,本发明所采取的技术方案是:一种恰玛古配方面粉,以重量分数计,包括以下组分:恰玛古粉5-10%、小麦粉80-90%、胡萝卜粉1-5%、红枣粉0.1-2%、巴旦木0.1-2%、甜杏仁0.1-2%。
在上述技术方案的基础上,本发明还可以有如下进一步的具体选择或优化选择。
优选的,上述组分以重量分数计,包括:恰玛古粉8%、小麦粉90%、胡萝卜粉1%、红枣粉0.5%、巴旦木0.2%、甜杏仁0.3%。
优选的,上述组分以重量分数计,还包括锁阳0.05%、大芸0.05%。
优选的,上述组分以重量分数计,还包括鹰嘴豆粉5-10%。
优选的,上述组分以重量分数计,还包括荞麦粉5-10%。
对于上述组分,其中:
恰玛古除了富含钙、铁、锌、钾等有益健康的碱性矿物元素及有机生物碱外,还含有十九种氨基酸、蛋白质、粗纤维、亚油酸、类黄酮、多糖、皂甙等物质,是一种比人参更为合理的植物根茎,可以同时对身体的各个脏器进行全面的营养调节,达到酸碱平衡、改善体质的作用。
锁阳肉质茎富含鞣质,可提炼栲胶,并含淀粉,可酿酒,作为食品应用,其也具有非常高的药用价值,具有能补肾、益精、润燥,主治阳痿遗精、腰膝酸软、肠燥便秘,对瘫痪和改善性机能衰弱有一定的作用。
大芸内含16种氨基酸,有补肾益精、润燥养筋、滋养精血、润滑肠道、促进肾上腺皮质激素的释放,增强免疫功能的功效。适用于阳瘘遗精、腰膝酸软、肠燥便秘、月经不调,闭经,不孕,阳痿,遗精,小便淋漓,声哑失音,便秘,虚寒泄泻的虚弱者。
鹰嘴豆富含补充氨基酸、抗性淀粉、黄酮、B族维生素、铁、锌、镁等微量元素。具有提高免疫力、整理肠道菌群,减肥、预防高血脂和糖尿病等功效。
荞麦富含补充黄酮、多酚类物质等抗氧化物质以及氨基酸、B族维生素、铁、锌、镁等微量元素。具有消除体内自由基,提高抗氧化作用,整理肠道菌群、预防高血脂和糖尿病等功效。
胡萝卜中的胡萝卜素能够转变成维生素A,在预防上皮细胞癌变的过程中具有重要作用,胡萝卜中的木质素作为一种抗氧化剂,具有抑制氧化及保护机体正常细胞免受氧化损害的防癌作用。另外胡萝卜素还具有造血功能补充人体所需的血液,从而改善贫血或冷血症,同时含有丰富的钾。
红枣味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能;而现代的药理学则发现,红枣含有蛋白质、糖类、有机酸、维生素A、维生素C、多种微量钙以及氨基酸等丰富的营养成份。
巴旦木富含维生素E和不饱和脂肪酸是同等重量的牛肉的六倍,治疗高血压、神经衰弱、皮肤过敏、气管炎、小儿佝偻等疾病。
甜杏仁富含蛋白质、脂肪、糖类、胡萝卜素、B族维生素、维生素C、维生素P以及钙、磷、铁等营养成分。其中胡萝卜素的含量在果品中仅次于芒果,人们将甜杏仁称为抗癌之果。甜杏仁含有丰富的脂肪油,有降低胆固醇的作用,因此,甜杏仁对防治心血管系统疾病有良好的作用;中医中药理论认为,甜杏仁具有生津止渴、润肺定喘的功效,常用于肺燥喘咳等患者的保健与治疗。
此外,本发明还提供了上述恰玛古面粉的生产工艺,其包括如下步骤:
按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。
需要说明的是,其中所述恰玛古粉、胡萝卜粉、红枣粉、锁阳粉、大芸粉通过分别选取各自原料进行清洗、切片、脱水干燥,超微粉碎制成。所述小麦粉、巴旦木粉、甜杏仁粉、鹰豆粉、荞麦粉分别通过获得干燥原料直接研磨成粉制成。
与现有技术相比,本发明的有益效果是:本发明提供的一种恰玛古配方面粉,充分利用了恰玛古富含补充B族维生素、铁、锌、镁等微量元素以及膳食纤维、黄酮等营养物质。具有润肺止咳、填精壮肾、清肝明目等作用以及整理肠道菌群,减肥、预防高血脂和糖尿病等功效。将恰玛古与具有地方特色、民族特色、民族饮食文化的饮食习惯融合,从而生产符合新疆人民迫切需要的含有恰玛古的面粉。同时,结合当地物产,选取选材方面,食材便宜,具有健康食疗效果的胡萝卜、红枣、巴旦木、甜杏仁等食材添加入所述配方面粉,使其口感更佳,味道丰富,营养全面。此外,还可以根据其针对的消费者不同,采用不同的配方,可以增强其食疗效果,或者增强其功能性食用价值。
具体实施方式
为了更好地理解本发明,下面结合具体实施例进一步阐明本发明的内容,但本发明的内容不仅仅局限于下面的实施例。
实施例1:
一种恰玛古配方面粉,以重量分数计,包括以下组分:恰玛古粉10%、小麦粉82%、胡萝卜粉2%、红枣粉2%、巴旦木2%、甜杏仁2%。具体生产工艺如下:按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。上述恰玛古配方面粉适用于普通大众,可以作为普通市售产品,利用其生产加工的面点具有恰玛古的香味,且营养丰富,口感风味俱佳。
实施例2:
一种恰玛古配方面粉,以重量分数计,包括以下组分:恰玛古粉8%、小麦粉90%、胡萝卜粉1%、红枣粉0.5%、巴旦木0.2%、甜杏仁0.2%、锁阳0.05%、大芸0.05%。具体生产工艺如下:按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。上述恰玛古配方面粉适用于能够进行消费升级的人群,可以作为高端市售产品,利用其生产加工的面点不但具有恰玛古的香味,营养丰富,而且具有一定的保健和食疗作用,深受高端消费者的欢迎。
实施例3:
一种恰玛古配方面粉,以重量分数计,包括以下组分:恰玛古粉5%、小麦粉84%、鹰嘴豆粉10%、胡萝卜0.5%、红枣粉0.3%、巴旦木0.1%、甜杏仁0.1%。具体生产工艺如下:按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。上述恰玛古配方面粉其原料便宜,成本相对便宜,适用于普通大众,可以作为普通市售产品,利用其生产加工的面点具有恰玛古的香味,而且还有鹰嘴豆粉的香味,且营养丰富,口感风味俱佳。
实施例4:
一种恰玛古配方面粉,以重量分数计,包括以下组分:恰玛古粉8%、小麦粉80%、鹰嘴豆粉5%、胡萝卜5%、红枣粉0.1%、巴旦木0.9%、甜杏仁1%。具体生产工艺如下:按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。上述恰玛古配方面粉其兼具胡萝卜、恰玛古、鹰嘴豆等多者的香味,另外色泽发黄,适于制成特色面点销售,且营养丰富,口感风味俱佳。
实施例5:
一种恰玛古配方面粉,以重量分数计,包括以下组分:恰玛古粉5%、小麦粉87%、荞麦粉5%、胡萝卜2%、红枣粉0.8%、巴旦木0.1%、甜杏仁0.1%。具体生产工艺如下:按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。上述恰玛古配方面粉其生产加工的面点具有恰玛古、荞麦、以及胡萝卜等多种原料的香味和营养,营养丰富,口感风味俱佳。
将实施例1中的恰玛古配方面粉与市售普通面粉进行营养成分检测,结果如下表1所示:

由表1可知,本发明提供的恰玛古配方面粉由于添加了恰玛古以及其它多种食材,因而不但表观上具有恰玛古的香味,而且也具有更丰富的微量元素,具有更好的营养价值。

1.一种恰玛古配方面粉,其特征在于,以重量分数计,包括以下组分:恰玛古粉5-10%、小麦粉80-90%、胡萝卜粉1-5%、红枣粉0.1-2%、巴旦木0.1-2%、甜杏仁0.1-2%。
2.根据权利要求1所述的一种恰玛古配方面粉,其特征在于:以重量分数计,包括以下组分:恰玛古粉8%、小麦粉90%、胡萝卜粉1%、红枣粉0.5%、巴旦木0.2%、甜杏仁0.3%。
3.根据权利要求1所述的一种恰玛古配方面粉,其特征在于:以重量分数计,还包括锁阳0.05%、大芸0.05%。
4.根据权利要求1所述的一种恰玛古配方面粉,其特征在于:以重量分数计,还包括鹰嘴豆粉5-10%。
5.根据权利要求1所述的一种恰玛古配方面粉,其特征在于:以重量分数计,还包括荞麦粉5-10%。
6.一种如权利要求1至5任一项所述的恰玛古配方面粉的生产工艺,其特征在于,其包括如下步骤:按各组分配比进行称量、混合、搅拌、包装获得恰玛古配方面粉成品。
