技术领域
本发明涉及一种米糕及其制备方法,属于食品加工技术领域。
背景技术
米糕拥有很悠久的历史,是中国的传统小吃食品之一。米糕通常以糯米或粳米为原料,采用除杂清洗、浸泡、磨粉、揉粉、配料、汽蒸等工艺步骤加工而成。其不足是现有的米糕通常只有填饱肚子的功能,没有益气润肠的食疗保健功能。
中医认为气血是人体内气和血的统称,气与血各有其不同作用而又相互依存﹐以营养脏器组织﹐维持生命活动。气是人体最基本的物质,由肾中的精气、脾胃吸收运化水谷之气和肺吸入的空气几部分结合而成。气虚多由先天禀赋不足,或后天失养,或劳伤过度而耗损,或久病不复,或肺脾肾等脏腑功能减退,气的生化不足等所致。亚健康的根本原因是阴阳气血不足,五脏功能低下,也与元气不足、气虚相符。
食疗养生法简称“食养”。即利用食物来影响机体各方面的功能,使其获得健康或防病的一种养生方法。俗话也就是通过吃来对我们的身体进行保养。
发明内容
为了克服现有的米糕只有填饱肚子的功能,没有润肠益气的食疗保健功能的不足,本发明提供一种益气保健米糕,该益气保健米糕不仅具有填饱肚子的功能,还具有补中益气、滋补肝肾、健脾、润肠通便的功效,提高机体免疫功能,增强机体适应调节能力,适合气虚血虚的人作为养生食物食用。
本发明的技术方案是,一种益气保健米糕,由以下原料制备而成,按重量份组成为:糯米10-15份、粳米170-185份、白糖粉5-10份、红枣2-3份、枳壳2-3份、人参1-2份、白术2-3份、山药2-3份、白豆蔻2-3份、柏子仁2-3份、生何首乌1-2份、杜仲1-2份、枸杞子1-2份、砂仁1-2份、鲜白茅根3-5份、苹果10-15份、猕猴桃10-15份、草莓5-10份;
其制备方法包括如下步骤:(1)浸泡:将糯米、粳米放在浸泡池中加清水浸泡,待米粒发胀,含水为25%-35%时滤出糯米、粳米;
(2)磨粉:将浸泡好的糯米、粳米混合均匀后倒入粉碎机,粉碎磨成65-70目的湿米粉;
(3)稠膏制备:将原料红枣2-3份、枳壳2-3份、人参1-2份、白术2-3份、山药2-3份、白豆蔻2-3份、柏子仁2-3份、生何首乌1-2份、杜仲1-2份、枸杞子1-2份、砂仁1-2份、鲜白茅根3-5份洗净,加水浸泡1小时,煎煮50-60分钟,过滤去渣取滤液,滤液浓缩至温度30度时密度为1.2-1.3克/立方厘米的稠膏,备用;
(4)水果酱制备:取苹果10-15份、猕猴桃10-15份、草莓5-10份,倒入装有80-100目网筛的打浆机中搅打成烂糜,制成水果酱,备用;
(5)米糕块制备:将白糖粉5-10份、步骤(2)的湿米粉、步骤(3)的稠膏、步骤(4)的水果酱通过搅拌机机混合均匀,然后压模成长、宽、高为5CM、2CM、1CM的米糕块;
(6)汽蒸:将压模成形的米糕块放入蒸笼,用一个大气压、100度的水蒸汽蒸15分钟,然后起锅;
(7)包装:用塑料袋真空密封包装,灭菌,即得益气保健米糕。

本发明的有益效果如下,红枣:红枣最突出的特点是维生素含量高,有“天然维生素丸”的美誉,红枣味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能,现代的药理学则发现,红枣含有蛋白质、脂肪、醣类、有机酸、维生素A、维生素C、微量钙多种成分。
枳壳:行气开胸,宽中除胀。
人参:大补元气,补脾益肺,生津,自古以来拥有“百草之王”的美誉,更被东方医学界誉为“滋阴补生,扶正固本”之极品。含有30余种人参皂甙、有机酸及酯类、维生素和腺苷转化酶、铜、锌、铁、锰等多种微量元素。
白术:益气健脾,燥湿利水。
山药:益气养阴,补脾肺肾,固精止带。山药的营养成分丰富,含蛋白质、碳水化合物、钙、磷、铁、胡萝卜素、氨基酸、多酚氧化酶等营养成分,具有增强人体免疫功能的作用。
白豆蔻:味辛、性温,归肺、脾、胃经,功效化湿,行气,温中,止呕。
柏子仁:性平味甘,养心安神,润肠通便。柏子仁含有大量不饱和脂肪酸,还含有少量挥发油,皂甙、蛋白质、钙、磷、铁多种维生素等,营养丰富。
生何首乌:解毒、润肠。
杜仲:补肝肾、强筋骨。杜仲含杜仲胶、糖甙、生物碱、果胶、有机酸等多种营养成分,还含有很多人体必须的微量元素,如醛糖、绿原酸等。
枸杞子:滋补肝肾,益精明目。提高机体免疫功能,增强机体适应调节能力。含有丰富的维生素以及钙、磷、铁等元素和多种氨基酸成分。
砂仁:化湿行气,温中暖胃,有化湿醒脾、行气和胃、消食的作用。
鲜白茅根:凉血,清热利尿,清肺胃热。
苹果:含丰富的糖类,主要是蔗糖、还原糖以及蛋白质、脂肪、磷、铁、钾等物质;还含有苹果酸、奎宁酸、柠檬酸、酒石酸、单宁酸、果胶、纤维素、B族维生素、维生素C及微量元素,营养丰富。
猕猴桃:味甘酸,性寒,有生津解热、调中下气、止渴利尿、滋补强身之功效。其含有硫醇蛋白酶的水解酶和超氧化物歧化酶,具有养颜、提高免疫力、抗癌、抗衰老、软化血管、抗肿消炎功能。
草莓:性味甘、凉,入脾、胃、肺经,有润肺生津,健脾和胃,利尿消肿,解热祛暑之功,草莓中丰富的维生素C除了可以预防坏血病以外,对动脉硬化、冠心病、心绞痛、脑溢血、高血压、高血脂等,都有积极的预防作用。
本发明的上述技术方案相比现有的普通米糕具有以下优点:(1)本发明提供的益气保健米糕,由多种药食两用物品配伍后,相互协同,相互促进,更好的达到补中益气、滋补肝肾、健脾、润肠通便的功效,提高机体免疫功能,增强机体适应调节能力。
(2)本发明提供的益气保健米糕含有丰富的维生素、微量元素及人体所需的多种矿物成分,并能够有效调节人体的内分泌和新陈代谢,增强人体免疫力,使机体各方面趋于平衡,全面改善人体状况,延缓衰老。
(3)本发明提供的益气保健米糕,纯天然,不含任何对人体有害化学合成成分,对人体没有任何副作用,且性温和,适合气虚体质的人食用。
(4)本发明提供的益气保健米糕,含有苹果、猕猴桃、草莓三种水果成分,具有特有的混合水果味道,有效解除了米糕中的部分药食两用组分的异味,适口性更好,营养更丰富。
(5)本发明提供的益气保健米糕,通过各成分的合理配比,掺入水果成分,使益气保健米糕质地更滋润细软,口感更绵软。
具体实施方式
一种益气保健米糕,由以下原料制备而成,按重量份组成为:糯米10份、粳米170份、白糖粉5份、红枣2份、枳壳2份、人参1份、白术2份、山药2份、白豆蔻2份、柏子仁2份、生何首乌1份、杜仲1份、枸杞子1份、砂仁1份、鲜白茅根3份、苹果10份、猕猴桃10份、草莓5份;
其制备方法包括如下步骤:(1)浸泡:将糯米、粳米放在浸泡池中加清水浸泡,待米粒发胀,含水为25%-35%时滤出糯米、粳米;
(2)磨粉:将浸泡好的糯米、粳米混合均匀后倒入粉碎机,粉碎磨成65-70目的湿米粉;

1.一种益气保健米糕,其特征在于:由以下原料制备而成,按重量份组成为:糯米10-15份、粳米170-185份、白糖粉5-10份、红枣2-3份、枳壳2-3份、人参1-2份、白术2-3份、山药2-3份、白豆蔻2-3份、柏子仁2-3份、生何首乌1-2份、杜仲1-2份、枸杞子1-2份、砂仁1-2份、鲜白茅根3-5份、苹果10-15份、猕猴桃10-15份、草莓5-10份;
其制备方法包括如下步骤:(1)浸泡:将糯米、粳米放在浸泡池中加清水浸泡,待米粒发胀,含水为25%-35%时滤出糯米、粳米;
(2)磨粉:将浸泡好的糯米、粳米混合均匀后倒入粉碎机,粉碎磨成65-70目的湿米粉;
