Abstract
本发明涉及一种黑发亮发的营养代餐及其制备方法和应用,包括以下重量百分比的原料组分:黑米25‑50%、黑豆10‑30%、黑芝麻5‑25%、菊粉6‑15%、黑木耳5‑15%、黑枸杞3‑10%、魔芋精粉3‑10%。本发明添加了菊粉、魔芋粉两种膳食纤维,包含了可溶性膳食纤维和不可溶性膳食纤维。本发明所选用的杂粮原料资源丰富,营养成分比例合理,含有独特的保健营养因子,具有食疗功能,且成本低廉,储备量大,具有集营养性、安全性、保健性于一体的突出特点。本发明通过组分的筛选和有效的组分配比,实现精简的配方而非繁复的配方,实现突出的黑发亮发、又补充膳食纤维的作用。

本发明涉及一种营养代餐,尤其涉及一种黑发亮发的营养代餐及其制备方法和应用,属于功能食品技术领域。
背景技术
现代社会生活中,随着社会节奏的加快、生活压力增大、脑力工作强度大、运动少、内分泌系统紊乱、饮食及睡眠不规律等情况,造成亚健康情况严重,表现为精气不足,气血虚等症状,进而造成眩晕、疲劳、五脏虚损、皮肤粗糙、须发枯槁早白、脱发秃顶、肠燥便秘、口疮口臭等病症。而随着亚健康人群的扩大,相应的产品市场也迅速增加。
在这种情况下,代餐产品作为一种新型的健康食品应运而生,其通过使用营养健康的原料、合理的搭配,可以补充人体所需,能够为人们提供一种营养健康的饮食方案。
目前,黑发亮发的代餐食品已经很多,例如,专利申请公开号为CN107737254A中公开了补肾黑发保健品,由不同重量分数的原料组成:黑豆、黑米、黑芝麻、桑椹、花生衣、制首乌、侧柏叶、三七、海盐。专利申请公开号为CN 102038259 B中公开了一种益肾补血的固体饮料及其加工方法,所述主料为:黑豆5-30份、黑米1-10份、黑芝麻1-15份、黄豆5-15份、核桃仁2-10份、杏仁1-7份、山药1-5份,所述辅料为:绵白糖和糊精各1-3份、植脂末适量。专利申请公开号为CN 102342412 B中公开了一种黑色杂粮保健产品及其制备方法,由主料和辅料组成,所述主料为黑豆3-6份、黑米3-7份、黑芝麻1-4份、茶树菇1-2份、糙米1-2份,所述辅料为绵白糖1-3份、糊精1-3份。专利申请公开号为CN 105029426 A中公开了一种乌发亮发滋补粉及其制备方法,由以下重量份数配比的原料组成:黑豆90-110份、黑米40-60份、黑芝麻10-30份、木糊精10-30份、豆油5-20份、羧甲基纤维素钠1-3份以及木糖醇10-30份和阿斯巴甜0.1-0.5份或者蔗糖20-40份、葡萄糖10-30份。
可见,随着人们对健康的关注,代餐食品配方越来越趋向于营养、科学,但是。包括上述专利申请中的现有技术的代餐食品多以滋补、黑发、生发为目的,而忽视了人们机体代谢率降低,肠胃功能破坏等问题。
发明内容
针对以上不足,本发明提供一种黑发亮发的营养代餐及其制备方法和应用,根据中医养生法则,符合传统的谷物主食文化,添加益生元、膳食纤维及黑木耳,营养均衡、味道好,还能以黑养黑、补充人体所需的营养和膳食纤维,起到了黑发亮发、调节肠道菌群、防止便秘的作用。
本发明通过以下方案达到上述目的:
第一方面,提供一种黑发亮发的营养代餐,包括以下重量百分比的原料组分:黑米25-50%、黑豆10-30%、黑芝麻5-25%、菊粉6-15%、黑木耳5-15%、黑枸杞3-10%、魔芋精粉3-10%。
优选的,所述代餐包括以下重量百分比的原料组分:黑米25-40%、黑豆10-20%、黑芝麻5-15%、菊粉8-15%、黑木耳5-10%、黑枸杞3-8%、魔芋精粉3-8%。
优选的,所述代餐包括以下重量百分比的原料组分:黑米25-35%、黑豆10-15%、黑芝麻5-10%、菊粉8-10%、黑木耳5-8%、黑枸杞3-7%、魔芋精粉3-5%。

(2)粉碎:将熟化后物料过筛粉碎,优选粒度在60-200目,得到原料粉末;
(3)混合:搅拌混合均匀。
优选的,为了便于贩卖或运输或保存,所述制备方法还包括:(4)包装:将混合均匀后的粉末包装到袋中,每袋20g或每袋30g。
第三方面,提供一种上述黑发亮发的营养代餐的应用,包括:每日1-3袋,优选为开水或热水冲服,例如70-100℃水。
第四方面,还提供一种上述黑发亮发的营养代餐的应用,所述应用包括黑发亮发、和/或补充膳食纤维、和/或调节肠道菌群。

中医有云,黑入肾,肾主水,而发为肾之华,本发明采用黑色系的黑豆、黑米、黑芝麻、黑木耳进行合理搭配,所以本发明能益肾,从而起到黑发亮发的作用。
其中,黑豆味甘、性平、无毒,具有活血、利水、祛风、清热解毒、滋养健血、补虚乌发的作用,含较丰富的蛋白质、脂肪和碳水化物,以及胡萝卜素、维生素B1、B2、烟酸等;《本草汇言》说:“黑豆煮汁饮,能润肾燥,故止盗汗。”、《纲目》说:“黑豆治肾病,利水下气,制诸风热,活血”。《四川中药志》说:“黑豆治黄疸浮肿,肾虚遗尿。”
黑米在古时是“贡米”,具有良好的医疗保健作用,因外皮乌黑而得名,又称补血糯米、贡米、黑珍珠,是一种具有诸多保健功效的珍贵稻米。黑米营养丰富,含有蛋白质、脂肪、B族维生素、钙、磷、铁、锌等物质,营养价值高于普通稻米。具有滋阴补肾、益气强身、健脾开胃、补肝明目、养精固涩之功效,是抗衰美容、防病强身的滋补佳品。经常食用黑米,对慢性病人、康复期病人及幼儿有较好的滋补作用。
《本草纲目》记载,黑芝麻与大米煮粥,具有补肝肾,润五脏的作用,适用于产后乳汁不足以及老年体衰眩晕消瘦、便躁、须发早白等症状,建议经常佐餐食用。芝麻为胡麻科植物脂麻的种子,分白、黑两种。白芝麻多作食用,黑芝麻多入药用。芝麻历来被当作“仙家”食物,有延年益寿的作用。现代医学研究发现,每百克芝麻中含蛋白质21.9克,脂肪61.7克,钙564毫克,磷368毫克,铁50毫克,含铁量为各种食物之首。芝麻含有高达60%的不饱和脂肪酸,还含有维生素E,他们可以阻止体内产生过氧化脂质,从而维持含不饱和脂肪酸比较集中的细胞膜的完整和功能正常,起到延缓衰老的作用。
黑木耳,是生长在朽木上的一种食用真菌。中医学认为黑木耳性平味甘,久服能和血养荣,润肺补脑,益气强志。现代医学研究发现,黑木耳中含有一种抗凝血作用的物质,对冠心病、心脑血管病患者颇为有益。它肉质细腻,滑脆爽口,具有较高的营养价值,又称为“素中之荤”。在黑木耳可食部分中含有蛋白质、脂肪、碳水化合物、钙、胡萝卜素、硫胺素(维生素B1)、核黄素(维生素B2)、磷脂、植物固醇等丰富营养成分,而含铁量高是它的一大特点,为肉类含铁量的100倍。另外,黑木耳中所含的植物胶质体,是一种对人体有益的天然滋补剂。胶质体有较强的吸附力,它能吸附停留在人体消化道和呼吸道的灰尘及杂物,使其排出体外。因而它是长期从事矿山、冶金、化工、毛纺、理发、养路、教学等职业人员不可缺少的保健食品。
菊粉是多种蔬菜和水果中存在的一种天然成分,许多欧美国家认为它对人体没有危害,将其归为天然食品配料。2003年美国FDA确认菊粉为公认安全物质,推荐最大日摄入量为15~20g,日有效摄入量为5g,从而使菊粉作为膳食纤维广泛应用于食品、生物、化工、饲料等领域。当前美国人的每日膳食中含菊粉约为1~4g,欧洲人的每日膳食中含菊粉约3~11g。COUSSEMENT P A认为菊粉的适宜摄入量为3~8g/d,GIBSON C R等认为菊粉摄入量可以达到15g/d,在日常生活中,低剂量摄入菊粉对人体是有益的。我国卫生部公告2009年第5号规定菊粉的摄入量不超过15g/d。而研究表明,人体每天摄入5g菊粉或低聚果糖,肠道菌群中双歧杆菌的数量明显增加,且对健康无不良影响。
研究发现,人体摄食菊粉通过两种方式抑制有害菌的生长,一方面,每天摄食菊粉能使结肠中的双歧杆菌增殖8~10倍,增殖的双歧杆菌通过与病原菌竞争营养物质达到抑制其生长的效果;另一方面,菊粉经肠道菌群发酵后产生的乳酸、乙酸、丙酸和丁酸等短链脂肪酸可降低肠道pH,从而抑制有害菌生长。作为一种可溶性膳食纤维,菊粉可促进肠道蠕动、增加大便的含水量及改变大便的形态,从而缩短了粪便在结肠的停留时间,促进了致癌物的排泄和排便次数,对预防便秘、腹泻和预防结肠癌起到有利的作用。在特殊医学用途配方食品中,常添加具有改善便秘和腹泻的菊粉作为膳食纤维原料来源。
研究还发现,菊粉在肠道内经有益菌发酵后产生的短链脂肪酸可以降低肠道pH值l~2个单位,提高了多种矿物质的可溶性并且可以降解矿物质,使得Ca2+、Mg2+、Zn2+、Cu2+、Fe2+等金属离子得到有效的吸收而促进被动扩散,使更多的金属离子顺利快速的进入肠细胞。菊粉经发酵产生的短链脂肪酸可刺激结肠粘膜生长,从而促进上皮细胞的增殖并增大吸收面积,使得矿物质的运输通道增多。此外,菊粉的发酵产物可促进B族维生素合成,提高机体的营养状况和免疫力。
菊粉在人体口腔、胃及小肠中基本不分解和吸收,只有在结肠部位可以被益生菌发酵水解成单糖,因而对血糖水平和胰岛素含量没有影响。
作为可溶性膳食纤维,菊粉可在胃中吸水膨胀成高黏度胶体,延长胃排空时间,使人不易产生饥饿感,减少食物摄入量;在小肠内与脂肪和蛋白质等物质形成复合物,抑制此类物质的吸收,起到减肥的功效。它通过促进矿物质和维生素的吸收,使人保持健康,体力充沛,可以适当的增加运动量来控制体质量。另外,摄取菊粉后通过缓释作用控制血糖的升高,减少胰岛素分泌量,从而减少葡萄糖的产生,起到控制体质量的作用。
本发明合理组合以上营养成分,能达到有效乌须发、补充膳食纤维、调节肠道菌群的作用,适宜于更多人群长期食用,有助于改善人体机能。
综合对比现有技术,本发明的进步如下:
1、富含膳食纤维
本发明添加了菊粉、魔芋粉两种膳食纤维,包含了可溶性膳食纤维和不可溶性膳食纤维。与同类食品类产品比较,本发明的膳食纤维来源更丰富,含量也较高,在改善黑发亮发的同时,改善肠道菌群,防止便秘。
2、营养全面
本发明所选用的杂粮原料资源丰富,营养成分比例合理,含有独特的保健营养因子,具有食疗功能,且成本低廉,储备量大,具有集营养性、安全性、保健性于一体的突出特点。
除此之外,本发明还添加了黑枸杞,添加了优质黑木耳,是一种营养全面的代餐,饱腹控食的同时,补充足够的膳食纤维,利于调动肠道功能,口感美味。
3、配方精简而效果突出
本发明通过组分的筛选和有效的组分配比,实现精简的配方而非繁复的配方,实现突出的黑发亮发、又补充膳食纤维的作用。
具体实施方式
以下结合具体实施例对本发明进行进一步说明。
实施例1:
一种黑发亮发的营养代餐,由以下重量百分比的原料组成:黑米35%、黑豆15%、黑芝麻15%、菊粉15%、黑木耳10%、黑枸杞5%、魔芋精粉5%。
实施例2
一种黑发亮发的营养代餐,由以下重量百分比的原料组成:黑米50%、黑豆20%、黑芝麻8%、菊粉10%、黑木耳5%、黑枸杞3%、魔芋精粉4%。
实施例3
一种黑发亮发的营养代餐,由以下重量百分比的原料组成:黑米40%、黑豆30%、黑芝麻5%、菊粉8%、黑木耳8%、黑枸杞3%、魔芋精粉6%。
实施例4
一种黑发亮发的营养代餐,由以下重量百分比的原料组成:黑米25%、黑豆12%、黑芝麻25%、菊粉12%、黑木耳12%、黑枸杞10%、魔芋精粉4%。
实施例5
一种黑发亮发的营养代餐,由以下重量百分比的原料组成:黑米30%、黑豆10%、黑芝麻10%、菊粉15%、黑木耳15%、黑枸杞10%、魔芋精粉10%。
对比例1
营养代餐粉,由以下重量百分比的原料组成:黑米35%、黑豆15%、黄精15%、菊粉15%、黑木耳10%、黑枸杞5%、魔芋精粉5%。
对比例2
营养代餐粉,由以下重量百分比的原料组成:黑米35%、黑豆15%、墨旱莲15%、菊粉15%、黑木耳10%、黑枸杞5%、魔芋精粉5%。
试验例1
1、受试样品
本试验以实施例1作为本发明试食样品,为了更好地体现本发明黑发亮发功效,与市售营养代餐粉1(黑大豆、黑芝麻、核桃仁、红枣干、山药、结晶果糖、黑米、黑藜麦、奇亚籽)、市售营养代餐粉2(黑芝麻、黑豆粉、黑米粉、薏苡仁粉、山药粉、魔芋粉)与不添加代餐粉的正常饮食作为对照组。
2、受试人群
随机选取80位有头发枯黄暗沉、胃胀、严重便秘等肠胃功能不足的患者与80位发色、肠胃功能正常人员作为本试验试食对象,年龄范围为18-60岁。
3、试验方法
随机将试食对象平均分成4组,每组20位患者与20位正常人员;每天规定时间食用试食营养代餐粉2次,每次1袋(60g),其余时间正常饮食,试食周期为60天。根据试食者服用产品后,对头发光泽、胃功能、排便三方面进行有效或者无效判断。
其中,每天每次试食2h内无饥饿感,无需再摄入其他食物,则视为有饱腹感;正常人员试食60天后,无出现明显肠胃功能下降,则判为有效;患者试食60天后,胃功能得到改善,则判为有效;食用后记录排便规律和次数,正常人员试食60天后,无出现明显排便困难或排便次数减少,则判为有效;患者试食60天后,便秘情况得到大部分改善,则判为有效。
4、试食结果
试食结果如表1所示。

从表1结果可以看出,本发明营养代餐效果明显高于市售代餐粉,试食者85.3%表示发质变好,不影响正常试食者胃功能及该组试食者的排便,对胃功能不足患者改善率达78%,总体有效率高达90.1%。可见本发明的黑发亮发营养代餐具有较为明显的亮泽秀发、改善肠道、缓解便秘的功效。
试验例2
1、受试样品
本试验以实施例1作为本发明试食样品,为了更好地体现本发明黑发亮发功效,与对比例1、对比例2、现有技术产品(CN107737254A)与不添加代餐粉的正常饮食作为对照组。
2、受试人群
随机选取150位有头发枯黄暗沉/头发早白、肠胃功能不足的患者作为本试验试食对象,年龄范围为18-60岁。
3、试验方法
随机将试食对象平均分成5组,每组30人;每天规定时间食用试食营养代餐粉、对比例1、对比例2的样品各3次,每次1袋(60g),及现有对比例产品3次,每次1袋(81g)其余时间正常饮食,试食周期为60天。根据试食者服用产品后,对头发光泽、肠胃功能方面进行有效或者无效判断。
其中,大部分症状得到改善,则判为有效。
4、试食结果
试食结果如表2所示。

表2的结果可以看出,本发明营养代餐效果明显高于其他对比产品,试食者88.1%表示发质变好,对胃功能不足患者改善率达82.3%,总体有效率高达85.2%。可见本发明的黑发亮发营养代餐具有较为明显的亮泽秀发、改善肠胃功能的功效。
以上所述,仅为本发明的较佳的具体实施例,但本发明的保护范围并不局限于此,任何熟悉本技术领域的技术人员在本发明揭露的技术范围内,根据本发明的技术方案及其构思加以等同替换或改变,都应涵盖在本发明的保护范围内。
Claims (10)
1.一种黑发亮发的营养代餐,其特征在于,包括以下重量百分比的原料组分:黑米25-50%、黑豆10-30%、黑芝麻5-25%、菊粉6-15%、黑木耳5-15%、黑枸杞3-10%、魔芋精粉3-10%。
2.根据权利要求1所述的一种黑发亮发的营养代餐,其特征在于,所述代餐包括以下重量百分比的原料组分:黑米25-40%、黑豆10-20%、黑芝麻5-15%、菊粉8-15%、黑木耳5-10%、黑枸杞3-8%、魔芋精粉3-8%。
3.根据权利要求1所述的一种黑发亮发的营养代餐,其特征在于,所述代餐包括以下重量百分比的原料组分:黑米25-35%、黑豆10-15%、黑芝麻5-10%、菊粉8-10%、黑木耳5-8%、黑枸杞3-7%、魔芋精粉3-5%。
4.根据权利要求1所述的一种黑发亮发的营养代餐,其特征在于,所述黑米、黑豆、黑芝麻为干制品、和/或干制品经低温烘焙熟化、和/或干制品经挤压膨化熟化、和/或干制品经炒熟后,进行粉碎得到。
5.根据权利要求1所述的一种黑发亮发的营养代餐,其特征在于,所述的黑芝麻还可以是脱脂后的黑芝麻。
6.根据权利要求1所述的一种黑发亮发的营养代餐,其特征在于,所述黑木耳为干制品、和/或干制品经蒸制熟化、和/或干制品经低温烘焙熟化后,经粉碎后得到。
7.根据权利要求4或6所述的一种黑发亮发的营养代餐,其特征在于,所述经低温烘焙熟化后,经粉碎后得到为经低温30~50℃烘焙8~24h熟化后,进行粉碎得到。
8.一种权利要求1至7中任一所述的黑发亮发的营养代餐的制备方法,其特征在于,包括:
(1)原料熟化;
(2)粉碎:将熟化后物料过筛粉碎,优选粒度在60-200目,得到原料粉末;
(3)混合:搅拌混合均匀。
9.一种权利要求1至7中任一所述的黑发亮发的营养代餐的应用,包括:每日1-3袋,优选为开水或热水冲服,例如70-100℃水。
10.一种权利要求1至7中任一所述的黑发亮发的营养代餐的应用,所述应用包括黑发亮发、和/或补充膳食纤维、和/或调节肠道菌群。
