本发明公开了一种别有风味的香辣蟹的烹制方法,该方法即用辣椒(红,尖,干)20克,花椒10克,姜6克,大蒜(白皮)5克,大葱10克,盐5克,胡椒粉5克,料酒12克,淀粉(玉米)70克,鸡精8克,香油5克,辣椒油20克,植物油50克教您麻辣炒蟹怎么做,如何做麻辣炒蟹才好吃1.活肉蟹从腹脐外取壳,去净内脏及鳃叶,去除腿尖及壳沿,洗净后,将蟹斩成八块,加入适量盐、料酒拌匀;2.锅置旺火上,下植物油烧至五成热油温,然后将蟹块斩口处粘裹上干淀粉,入油锅内浸炸至熟(蟹壳同时熟透);3.花椒放入热油锅内炸出花椒油待用;4.锅内另加植物油,烧至四成油温,投入辣椒段、花椒炒香,掺入高汤,略烧片刻,再下姜片、葱段、蒜片、蟹,后放入盐、料酒、鸡精烧2分钟后,用水淀粉勾薄芡,最后加入香油、花椒油、红油、胡椒粉翻匀即可装盘。

香辣蟹是很有特色的重庆特色小吃,香辣蟹以螃蟹为主要材料,烹饪的做法炒为主,口味属于辣味。
目前全国各大小饭店和家庭都在风靡。传统的烹制方法很多,随着人们生活水平的不断提高,对餐桌上的要求也在提高。人的口味也有了新的变化。
发明内容
主料:螃蟹250克
  调料:辣椒(红,尖,干)20克,花椒10克,姜6克,大蒜(白皮)5克,大葱10克,盐5克,胡椒粉5克,料酒12克,淀粉(玉米)70克,鸡精8克,香油5克,辣椒油20克,植物油50克 教您麻辣炒蟹怎么做,如何做麻辣炒蟹才好吃
  1. 活肉蟹从腹脐外取壳,去净内脏及鳃叶,去除腿尖及壳沿,洗净后,将蟹斩成八块,加入适量盐、料酒拌匀;
  2. 锅置旺火上,下植物油烧至五成热油温,然后将蟹块斩口处粘裹上干淀粉,入油锅内浸炸至熟(蟹壳同时熟透);
  3. 花椒放入热油锅内炸出花椒油待用;
  4. 锅内另加植物油,烧至四成油温,投入辣椒段、花椒炒香,掺入高汤,略烧片刻,再下姜片、葱段、蒜片、蟹,后放入盐、料酒、鸡精烧2分钟后,用水淀粉勾薄芡,最后加入香油、花椒油、红油、胡椒粉翻匀即可装盘。

1.一种别有风味的香辣蟹的烹制方法,其特征在于该方法主要由锅内另加植物油,烧至四成油温,投入辣椒段、花椒炒香,掺入高汤,略烧片刻,再下姜片、葱段、蒜片、蟹,后放入盐、料酒、鸡精烧2分钟后,用水淀粉勾薄芡 。
2.根据权利要求书1所述的一种别有风味的香辣蟹的烹制方法,其特征在于将花椒放入热油锅内炸出花椒油待用,锅置旺火上,下植物油烧至五成热油温,然后将蟹块斩口处粘裹上干淀粉,入油锅内浸炸至熟(蟹壳同时熟透)。
