Abstract
bebidas derivadas de cevada e malte com baixos níveis de dms. de acordo com a invenção, são fornecidas bebidas derivadas de cevada caracterizadas por níveis notavelmente reduzidos, tanto de sulfeto de dimetila (dms) e/ou seu precursor s-metil-l-metionina (smm), ou sem os referidos compostos. além disso, a invenção se refere aos métodos para produzir as bebidas acima mencionadas - e também às plantas de cevada úteis na preparação de tais bebidas, bem como outros produtos de planta preparados a partir das referidas plantas. a utilização da invenção abre o caminho para tomar os processos de produção de bebidas melhores com perfis de sabor melhorados, e também promete reduções significativas na entrada de energia térmica para a produção de cerveja.
