Abstract

La inulina que está contenida en una alta concentración en plantas de agave que crece en zonas áridas, se ha utilizado hasta ahora exclusivamente en la producción de bebidas alcohólicas tales como tequila. La intención aquí es de producir la inulina altamente soluble en agua con un alto valor agregado de estas plantas. También se tiene la intención de producir un jarabe de agave tequila, una bebida alcohólica o la inulina altamente soluble en agua a partir del bagazo exprimido. Los bulbos (varias decenas kg) de planta de agave se cortan en piezas pequeñas llamada piñas que se utilizan en la producción de tequila, y se inactivan las enzimas en los mismos y se suaviza la textura ya sea a temperatura ambiente o al calor. A continuación, se exprimen las piezas para dar un extracto líquido que luego se refina con una resina de adsorpción. El producto refinado se emplea como tal en la forma de una concentración, o como polvo al secar.
