Abstract

 バナナのような水分が少なく粘度の高い果実をジュースに加工する。また、バナナ、マンゴーのような比較的酸味がなく粘度の高い果実から、果実酒を製造するための新規な手段を提供する。  果実にAspergillus属の麹菌を添加してバナナを糖化し、糖化物を濾過してジュースを製造する。また、果実に、クエン酸生成能を有する麹菌を添加して前記果実を糖化し、続いて、その糖化した液をアルコール発酵させ、麹菌の生成するクエン酸によって腐敗を防止し、麹菌の生成する酵素によって果実の流動化を促進して果実酒を製造する。
