Abstract
La presente se refiere a un proceso de preparación de un producto de té líquido caracterizado que comprende las etapas de: (a) incubar la hoja de té fresca a una temperatura en el rango de 4ºC a 60ºC en condiciones anaeróbicas durante un período de 4 a 36 horas; (b) someter la hoja incubada a una etapa de separación y fermentación; (c) expresar el jugo de la hoja de té fermentada para producir el residuo de la hoja y el jugo de té; (d) incubar el jugo en presencia de 0,001 a 5% en peso de al menos una enzima que tiene actividad de b-glucosidasa de al menos 50 unidades/mg para producir el producto de té líquido.
