Claims (19)
1. Piće pipravljeno od biljke ječma, ili njegova dijela, pri čemu piće sadrži razinu dimetil sulfida (DMS) nižu od 20 ppb i razinu S-metil-I-metionina (SMM) nižu od 20 ppb, i pri čemu navedena biljka ječma, ili njezin dio, nosi mutaciju genetskog koda metionin S-metiltransferaze (MMT), koja uzrokuje potpuni gubitak funkcionalnog MMT.
2. Piće sukladno zahtjevu 1, pri čemu je navedeno piće od slada.
3. Piće sukladno bilo kojem od prethodnih zahtjeva, pri čemu je piće pivo.
4. Piće sukladno bilo kojem od prethodnih zahtjeva, pri čemu piće sadrži manje od 10 ppb DMS.
5. Piće sukladno bilo kojem od prethodnih zahtjeva, pri čemu piće sadrži manje od 10 ppb, smetil- I-metionina (SMM).
6. Biljka ječma, ili njezin dio, pri čemu biljka nosi mutaciju genetskog koda metionin-smetiltransferaze (MMT) koja uzrokuje potpun gubitak MMT funkcije.
7. Biljka ječma, ili njezin dio, sukladno zahtjevu 6, pri čemu je mutacija unutar mjesta spoja genetskog koda MMT.
8. Biljka ječma, ili njezin dio, sukladno bilo kojem od zahtjeva 6 do 7, pri čemu je mutacija genetskog koda MMT G→A mutacija baznog br. 3076iz SEQ ID NO:3 ili G→A mutacija baznog br.. 1462 iz SEQ ID NO:16.
9. Ječam ili njegov dio sukladno bilo kojem od zahtjeva 6do 8, pri čemu mutacija rezultira genetskim kodiranjem krnjeg oblika MMT koji sadrži N-terminal fragment divljeg tipa MMT i opcionalno dodatne C-terminal sekvence koje se ne nalaze u divljem tipu MMT, pri čemu navedeni N-terminal fragment sadrži najviše 500 N-terminal aminokiselina iz SEQ ID NO:6.
10. Piće sukladno bilo kojem od zahtjeva 1 do 5 pri čemu je piće pripravljeno od biljke ječma, ili njezinog dijela, sukladno bilo kojem od zahtjeva 6 do 9.
11. Spoj slada koji sadrži prerađeni ječam, ili njegov dio, pri čemu je navedeni ječam biljka ječma sukladno bilo kojem od zahtjeva 6 do 9.
12. Spoj slada sukladno zahtjevu 11, pri čemu je spoj slada mljeveni slad.
13. Sastav sladovine pripravljem pomoću ječma, ili njegovog dijela, sukladno bilo kojem od zahtjeva 6 do 9, ili uporabom spoja pripravljenog od navedenog ječma ili njegovog dijela, ili njihovih mješavina, pri čemu spoj sladovine sadrži manje od 20 ppb SMM.
14. Postupak proizvodnje pića koje sadrži manje od 20 ppb DMS i manje od 20 ppb SMM, navedeni postupak sadrži korake:
(i) priprava spoja koji sadrži ječam, ili njegove dijelove, sukladno bilo kojem od zahtjeva 6 do 9;
(ii) prerada spoja (i) u piće;
dobivanjem pića koje sadrži manje od 20 ppb DMS i manje od 20 ppb SMM.
15. Postupak proizvodnje sastava slada na najviše 200 ppb slobodnog DMS, navedena metoda sadrži korake:
(i) pružanje zrnja ječma sukladno bilo kojem od zahtjeva 6 do 9;
(ii) namakanje zrnja;
(iii) klijanje namočenog zrnja u prethodno određenim uvjetima;
(iv) tretiranje isklijanog zrnja toplinom;
proizvodeći time spoj slada koji sadrži najviše 200 ppb slobodnog DMS.
16. Biljka ječma ili njezin dio sukladno bilo kojem od zahtjeva 6 to 9, pri čemu biljka ječma nosi mutaciju genetskog koda lipoksigenaze 1, uzrokujući poptpun gubitak aktivnosti lipogenaze 1.
17. Spoj slada sukladno bilo kojem od zahtjeva 11 do 12, pri čemu je slad pripravljen od ječma, ili njegovog dijela, sukladno zahtjevu 16.
18. Spoj sladovine sukladno zahtjevu 13, pri čemu je sladovina pripravljena od ječma, ili njegovog dijela, sukladno zahtjevu 16.
19. Piće sukladno bilo kojem od zahtjeva 1do 5, pri čemu je piće pripravljeno od ječma, ili njegovog dijela, sukladno zahtjevu 16.
