Abstract

"CERVEJA SEM GLúTEN QUE CONTéM MALTE DE ARROZ". Uma cerveja isenta de glúten obtida mediante uma mistura de materiais iniciais que compreende trigo mourisco, malte de arroz e, opcionalmente, um componente escolhido do grupo que compreende milho, milho sorgo, milho painço e/ou os seus respectivos xaropes; este componente é, preferivelmente, xarope de milho; a cerveja obtém-se por sacarificação da mistura anteriormente mencionada, e opcionalmente, na presença de enzimas amilolíticas e glucanase, e é particularmente, adequada para ser consumida por indivíduos que não toleram o glúten.
