Abstract

Patente de Invenção: "CERVEJA SEM GLúTEN". Cerveja isentade glúten obtida mediante uma mistura de materiais iniciais quecompreende, pelo menos, um cereal isento de glúten e enzimaspara a sacarificação do amido contido neste cereal, que éescolhido, preferivelmente, do grupo que compreende trigo mouro,sorgo e painço e que é, vantajosamente, o trigo mouro; este tipode cerveja obtém-se mediante um método que inclui uma fase desacarificação de uma mistura que compreende, pelo menos, umcereal isento de glúten e enzimas de sacarificação,particularmente, enzimas amilolíticas e glucanase, e é,especialmente, adequada para ser consumida por indivíduos quenão toleram o glúten.
