Abstract
Cerveza exenta de gluten, obtenida a partir de una mezcla de materiales de partida que comprende al menos un cereal exento de gluten y enzimas para sacarificar el almidón contenido en el dicho al menos un cereal. Por lo cual los celíacos no tendrían el inconveniente al gluten. En forma particular de la presente invención, al menos un cereal se escoge entre el grupo que comprende trigo sarraceno, que sustituye la cebada, sorgo y mijo.
