Abstract

Una cerveza exenta de gluten y un método para producirla. La cerveza exenta de gluten es obtenida a partir de una mezcla de materiales de partida quecomprende trigo sarraceno, malta de arroz y, opcionalmente, un componente escogido entre el grupoque comprende maiz, sorgo, mijo y/o jarabes de los mismos;este componente es preferentemente jarabe de maiz; la cerveza se obtiene mediante sacarificacion de la mezcla anteriormente mencionada, opcionalmente enpresencia de enzimas amilolíticas yglucana sa, y es particularmente adecuada para ser consumida por individuos que no toleran el gluten.
