Abstract

"MéTODO MELHORADO PARA A PREVENçãO OU REDUçãO DA TURBIDEZ EM BEBIDAS". A invenção diz respeito a um método para a prevenção ou redução da turbidez em uma bebida pela adição de uma endoprotease prolil-específica e/ou alamina-específica e a novas bebidas que podem ser obtidas pelos métodos de acordo com a invenção. Ela também diz respeito a novas endoproteases. Ela também diz respeito a métodos da forma supradescrita, em que enzimas auxiliares são usadas em combinação com a endoprotease específica. A informação de seq³ência de um DNA genómico, CDNA, bem como seq³ências de proteínas são providas.
