Abstract

La invención se refiere a un método para la prevención o reducción de la turbidez en una bebida mediante el agregado de una endoproteasa prolil específica y/o hidroxipropil específica y/o alamina específica y a nuevas bebidas que se pueden obtener mediante el método de acuerdo con la invención. El mismo también se refiere a nuevas endoproteasas. El mismo también se refiere a métodos que se describieron anteriormente donde se utilizan enzimas auxiliares en combinación con las endoproteasas específicas. Se proporcionan sobre la secuencia de un ADN genómico, cADN así como secuencias de proteína.
