Abstract
Método para producir una bebida clara, fermentada con Levadura, comprendiendo dicho método la produccion continua de mosto de cerveza a partir de mosto Más particularmente, el presente método comprende: a) remojar la malta en un material de partida particulado, que contiene almidon e hidrolizar el almidon enzimáticamente para dar azucares fermentables; b) producir de manera continua un mosto de cerveza fermentable a partir del mosto calentado; c) introducir el mosto de cerveza en un fermentador para fermentar el mosto de cerveza con la ayuda de levadura biologicamente activa; d) eliminar la levadura del producto fermentado por medio de sedimentacion; y e) clarificar el producto fermentado con bajo contenido en levadura para producir una bebida clara, fermentada con levadura al: procesar el producto fermentado con bajo contenido en levadura en uno o más separadores para eliminar el material suspendido, estando seleccionados d ichos uno o más separadores del grupo que consiste en centrífugas y centrífugas de decantador; y filtrar el producto fermentado procesado. La eficacia con la que se clarifica el producto fermentado con bajo contenido en levadura par dar una bebida clara puede mantenerse durante un período muy largo de tiempo (por ejemplo durante varias semanas), lo que es particularmente beneficioso en caso de un funcionamiento continuo para la fabricacion de cerveza en el que tanto la produccion de mosto de cerveza como la fermentacion con levadura se llevan a cabo de una manera continua.
