Abstract
Настоящее изобретение относится к способу производства напитков дрожжевой ферментации, при этом способ включает следующие последовательные непрерывные стадии: а) введения сусла в одну или ряд емкостей размножения, в которых сусло объединяется с рециркулированным потоком осадка, содержащего дрожжи, и в которых дрожжи размножаются в аэробных условиях и при этом дрожжи поддерживают в суспендированном состоянии; b) подачи сусла, содержащего дрожжи, из емкости размножения в одну или ряд емкостей ферментации, в которых дрожжи поддерживают в суспендированном состоянии в анаэробных условиях и метаболизируют углеводы, присутствующие в сусле; с) подачи ферментированного сусла из одной или ряда емкостей ферментации в один или более сепараторов с целью удаления осадка, содержащего дрожжи; d) рециркулирования части осадка, содержащего дрожжи, в одну или ряд емкостей размножения; и е) подачи остальной части ферментированного сусла к последующим технологическим операциям; причем содержание влажных дрожжей в сусле в одной или ряде емкостей ферментации поддерживают на уровне выше 100 г/л. Использование очень высоких концентраций дрожжей обеспечивает преимущество, состоящее в том, что период ферментации и/или объем ферментера могут быть значительно сокращены. Кроме того, непрерывная ферментация, проводимая при высоких концентрациях дрожжей, менее чувствительна к микробным инфекциям.
