Abstract

Un proceso para extraer beta-amilasa de cereales en el cual un cereal se somete a extracción en presencia de celulasa en un medio acuoso para obtener un extracto que contiene beta amilasa mejora el rendimiento de la beta-amilasa y eprmite reducir el tiempo de extracción. Este proceso es útil para obtener beta-amilasa de origen vegetal.También se da a conocer el uso de celulasa en la extracción de la beta-amilasa a partir de un cereal.
