Claims (14)
1. Способ получения композиции стевиол–гликозида или синтез соединения стевиол–гликозида, включающий (А) инкубацию субстрата и УДФ–глюкозы в присутствии рекомбинантной УДФ–гликозилтрансферазы, содержащий аминокислотную последовательность, имеющую по меньшей мере 80% идентичности с SEQ ID No: 6, или (B) инкубацию субстрата, сахарозы, УДФ и УДФ–глюкозы в присутствии рекомбинантной УДФ–гликозилтрансферазы, содержащей аминокислотную последовательность, имеющую по меньшей мере 80% идентичности с SEQ ID No: 6, и сахарозосинтазы в течение времени, достаточного для получения композиции стевиол–гликозида или соединения стевиол–гликозида.
2. Способ по п.1, в котором используют сахарозосинтазу, выбранную из группы, состоящей из сахарозосинтазы 1 Arabidopsis, сахарозосинтазы 3 Arabidopsis, сахарозосинтазы Vigna radiate и их функциональных гомологов.
3. Способ по п.2, в котором указанная сахарозосинтаза имеет по меньшей мере 80% идентичности с аминокислотной последовательностью сахарозосинтазы 1 Arabidopsis thaliana, как указано в SEQ ID No: 9.
4. Способ по п.1, в котором рекомбинантная УДФ–гликозилтрансфераза содержит аминокислотную последовательность, имеющую по меньшей мере 90% идентичности с SEQ ID NO: 6.
5. Способ по п.1, в котором рекомбинантная УДФ–гликозилтрансфераза содержит аминокислотную последовательность, имеющую по меньшей мере 95% идентичности с SEQ ID NO: 6.
6. Способ по п.1, в котором рекомбинантная УДФ–гликозилтрансфераза состоит из аминокислотной последовательности гликозилтрансферазы HV1 согласно SEQ ID NO: 6.
7. Способ по п.1, в котором субстратом является ребаудиозид Е, и глюкозный фрагмент из УДФ–глюкозы переносят и ковалентно связывают с С2'–19–О–глюкозой ребаудиозида Е с получением ребаудиозида Z2.
8. Соединение ребаудиозида Z2, имеющее структуру:

10. Подсластитель по п.9, дополнительно содержащий по меньшей мере один компонент из числа наполнителя, объемообразующего вещества и ингибитора слеживания.

12. Пищевой продукт по п.11, выбранный из группы, состоящей из напитков, кондитерских изделий, хлебобулочных изделий, печенья и жевательной резинки.
