Abstract
La presente invención se refiere a un proceso para producir un producto listo para el consumo gelatinizado a base de agua, jugo y/o leche que comprende al menos dos masas de gel homogéneas independientes, en el que las masas de gel independientes adyacentes tienen resistencias de gel diferentes, caracterizado por que comprende los siguientes pasos en el orden que se indica a continuación: (i) preparar por separado al menos dos composiciones en forma de gel líquido, comprendiendo cada una, una base acuosa y/o de jugo, y/o una base láctea, mezcladas con carragenano y galactomanano, (ii) precalentar por separado cada una de las composiciones hasta al menos 60°C preferentemente hasta al menos 70°C durante al menos 10 segundos, preferentemente 20 segundos, (iii) mezclar por separado cada una de las composiciones en forma de gel líquido a una temperatura de al menos 65°C, preferentemente de al menos 70°C, más preferentemente a una temperatura comprendida entre 70 y 75°C, durante un periodo de tiempo comprendido entre 30 segundos y 5 minutos, preferentemente durante aproximadamente 2 minutos, (iv) enfriar por separado cada una de las composiciones en forma de gel líquido a una temperatura comprendida entre 40°C y50°C,preferentemente a una temperatura de 45°C (v) enfriar por separado cada una de las composiciones en forma de gel líquido a una temperatura comprendida entre 30°C y 38°C , preferentemente entre 33°C y 35°C , más preferentemente a una temperatura de 34°C, mientras se mantiene una agitación constante de la masa de cada una de las composiciones en forma de gel líquido,(vi) dosificar secuencialmente cada una de las composiciones en forma de gel líquido en un recipiente.
