Abstract
La presente invención se refiere a bebidas de leche instantáneas acidificadas y métodos para producir tales bebidas de leche instantáneas acidificadas. Más específicamente, la presente invención proporciona una composición en polvo que se puede añadir a un producto de leche líquida con mezclado mínimo para producir una bebida de leche instantánea acidificada teniendo una textura suave. De manera aun más específica, la composición en polvo incluye por lo menos una sal monobásica comestible de ácido poliprotónico. La composición en polvo puede incluir una sal reguladora, y otros ingredientes opcionales tales como edulcorante, espesante, fibra, agente de volumen, agente anti-aglomeraciones, sólidos de jugo de frutas, sabores, y colorantes, etc..
