Abstract
1537456 Acidic dry beverage mixes for milk GENERAL FOODS Ltd 28 June 1977 27101/77 Heading A2B A dry beverage mix composition for use in a milk-based beverage comprises a readily soluble substrate, such as sucrose, milk solids, with carboxymethyl-cellulose incorporated in it so that upon dispersing in aqueous solution, the CMC will be readily solubilized, and an edible acid, such as citric, malic, fumaric, lactic or adipic acid or mixtures thereof. The composition may also include a sweetener such as dextrose, lactose, corn syrup solids, edible saccharin salts or a dipeptide, and may include milk solids so that it can be reconstituted with water. The CMC is present in amounts of about 0.15% by weight based, on the reconstituted beverage, and is incorporated in the substrate (a) when the substrate is sugar, by mixing the sugar with water and then adding the CMC, and (b) when the substrate is milk solids, by mixing whole milk with the CMC then drying. The pH of the reconstituted beverage lies in the range 3-5.
