Description
このようにしてpH調整や均質化処理が施された混合原料は、必要に応じて個別容器に分別充填した後、90℃以上、好ましくは120〜140℃の加熱殺菌が施され、その後冷却され製品とされる。
Claims (6)
- 生乳もしくは乳製品を原材料とした弱酸性乳加工品の製造方法であって、タンパク質に対して脂肪分を質量比で4倍以上かつリン酸塩を質量比(リン酸塩はPO 4 3- として)で0.24倍以上含有した混合原料を熱処理することを特徴とする弱酸性乳加工品の製造方法。
- 前記混合原料中に増粘剤を含有させたことを特徴とする請求項1に記載の弱酸性乳加工品の製造方法。
- 混合原料に均質化処理を施し、当該原料における平均粒子径を3.0μm以下とした後に熱処理することを特徴とする請求項1または2のいずれかに記載の弱酸性乳加工品の製造方法。
- 生乳もしくは乳製品を原材料とし、熱処理された弱酸性乳加工品であって、少なくともタンパク質に対して脂肪分を質量比で4倍以上かつリン酸塩を質量比(リン酸塩はPO 4 3- として)で0.24倍以上含有することを特徴とする弱酸性乳加工品。
- 弱酸性乳加工品中のコロイド粒子の平均粒子径が10μm以下であることを特徴とする請求項4に記載の弱酸性乳加工品。
- 弱酸性乳加工品は増粘されていることを特徴とする請求項4または5のいずれかに記載の弱酸性乳加工品。
