Abstract

La presente invención se refiere a una bebida láctea acidificada en polvo y a un método para producir la bebida láctea acidificada en polvo. Más específicamente, la presente invención proporciona una composición en polvo que se puede añadir a agua con mezclado mínimo para producir una bebida de frutas acidificada que contenga leche y que tenga una textura suave. El polvo comprende: i) 20-40% en peso de jugo de frutas en polvo; ii) 50-70% en peso de azúcar granulado; iii) 1-2% en peso de gránulos de ácido orgánico; iv) 4-10% en peso de leche en polvo y y) 3-4% en peso de carboximetilcelulosa en polvo compuesta de partículas, en donde las partículas tienen un diámetro de 0.5 mm o menos, de preferencia de 0.1 mm o menos. La presente invención proporciona también un proceso para producir el polvo para la preparación de una bebida láctea acidificada, que comprende las etapas de: mezclar en seco azúcar granulado con carboximetilcelulosa en polvo, y mezclar una leche en polvo, un jugo de frutas en polvo y ácido orgánico granulado en la mezcla.
