 加工特性上および味質・食感の優れた良質なクリーム状イヌリン組成物の製造法等を提供する。本発明は、重合度5~29のイヌリンを95%以上含むイヌリンまたはその混合物に常温水を加え、撹拌してクリーム状の組成物を製造すること、得られたクリーム状イヌリン組成物およびかかるクリーム状イヌリン組成物を含む飲食品、飼料に関する。
