Abstract
Pó para bebida láctea acidificada e método para sua produção. A presente invenção refere-se a um pó para bebida láctea acidificada e método para produção de tal pó para bebida láctea acidificada. Mais especificamente, a presente invenção proporciona uma composição em pó que pode ser adicionada a água com mistura mínima para produzir uma bebida de fruta acidificada contendo leite e tendo uma textura suave. O dito pó compreendendo: i) 20-40% por peso de pó e suco de fruta; ii) 50-70% por peso de açúcar granular; iii) 1-2% por peso de grânulos de ácido orgânico; iv) 4-10% por peso de leite em pó e v) 3-4% por peso de pó de carboximetilcelulose composto de partículas, em que as ditas partículas têm um diâmetro de 0,5 mm ou menos, preferivelmente de 0,1 mm ou menos. A presente invenção também proporciona um processo para produção de tal pó para o preparo de uma bebida láctea acidificada, que compreende as etapas de: misturar a seco açúcar com pó de carboximeticelulose, e misturar leite em pó, um pó de suco de fruta e ácido orgânico granular à mistura.
