Abstract
HIDROLISADO DE UM SUBSTRATO DE PROTEÍNA E UM PROCESSO PARA A SUA PRODUÇÃO. A presente invenção refere-se a um hidrolisado obtido pela hidrolise de um substrato compreendendo pelo menos uma proteína animal por uma bactéria de gráu alimentício em um ambiente de menos do que 2% em peso de teor de sal. A presente invenção ainda se refere a um processo para a produção de um hidrolisado, que compreende as etapas de a) mistura de um substrato com uma bactéria de gráu alimentício, e b) incubação da mistura da etapa a) sob condições de menos do que 2% em peso de teor de sal, em que o substrato compreende pelo menos uma proteína animal. O hidrolisado ou o hidrolisado obtido a partir do processo de acordo com a presente invenção é superior em sabor, aroma, textura e valor nutricional, e pode ser utilizado ou ainda processado para se obter um produto alimentar.
