Abstract
"MéTODOS PARA PRODUZIR UM INGREDIENTE ALIMENTìCIO NãO áCIDO, E UM PRODUTO ALIMENTìCIO ACABADO".Descritos aqui são ingredientes alimentícios com teor de ácido orgânico reduzido e métodos de produtos ingredientes alimentícios com teor de ácido orgânico reduzido tendo um gosto menos ácido e melhores propriedades organolépticas em baixo pH do que ingredientes alimentícios convencionais com teor total mais alto de ácido orgânico. Teor de ácido reduzido dos ingredientes alimentícios da presente invenção pode ser obtido submetendo os ingredientes alimentícios a métodos de redução de teor de sal de ácido orgânico/ácido orgânico.
