Abstract

La invención se refiere a una hamburguesa vegetariana que comprende los siguientes componentes: (a) 30-80 % en peso de la hamburguesa vegetariana de piezas de proteína vegetal texturizada (TVP) hidratadas; (b) 15-50 % en peso de la hamburguesa vegetariana de una suspensión aglutinante que contiene los siguientes ingredientes (b1) 2-12 % en peso de la suspensión aglutinante de metil celulosa; (b2) 0.3-8 % en peso de la suspensión aglutinante de patatina no desnaturalizada; (b3) 25-70 % en peso de la suspensión aglutinante de grasa; (b4) 25-70 % en peso de la suspensión aglutinante de agua; en donde la combinación de componentes (a) a (b) constituye al menos 80 % en peso de la hamburguesa vegetariana.
