Abstract
La presente invención se refiere a una composición auxiliar de cocción para la preparación de arroz frito, dicha composición comprende, en peso de materia seca, lo siguiente: i. 25 % a 55 % en peso de harina de arroz; ii. 45 % a 75 % en peso de glicéridos parciales seleccionados entre monoglicéridos, diglicéridos y combinaciones de los mismos. Además, la presente invención se refiere a un método para preparar la composición auxiliar de cocción, y a su uso en la preparación de arroz frito.
