Abstract
La presente invención se refiere a un auxiliar de cocción estable al almacenamiento para revestir y freír un producto alimenticio en una etapa, por ejemplo, en un sartén caliente, el auxiliar de cocción comprende 25-40 % en peso de aceite, 35-65 % en peso de agua, 10-25 % en peso de harina y/o almidón, y un emulsionante, y en donde el aceite y el agua tienen la forma de una emulsión. Los aspectos adicionales de la invención son el método para preparar dichos auxiliares de cocción así como además un método para revestir y freír un producto alimenticio en un sartén o superficie calentada.
