Abstract

La presente descripción proporciona un sustituto de carne de músculo entera y un método para su producción mediante el uso de técnicas de fabricación aditiva. Específicamente, el sustituto de carne de músculo entera comprende una o más capas de hebras que contienen proteínas impresas digitalmente, en donde cada capa comprende una única hebra contorneada o una pluralidad de hebras de manera que los segmentos entre los pliegues de la única hebra o la pluralidad de hebras están dispuestos esencialmente paralelos a lo largo de su eje longitudinal, en donde la hebra o hebras comprenden uno o más conjuntos de fibras proteicas texturizadas alineadas axialmente; y en donde al menos una porción de las fibras proteicas texturizadas comprende fibras alargadas que tienen una longitud superior a 5 mm. El método descrito en la presente descripción comprende hacer funcionar una impresora digital para dispensar en un lecho de impresora una única hebra que contiene proteína contorneada o una pluralidad de hebras individuales que contienen proteína, en donde la única hebra se pliega o la pluralidad de hebras están dispuestas de manera que los segmentos entre los pliegues de la única hebra o la pluralidad de hebras son esencialmente paralelos a lo largo de su eje longitudinal.
