Abstract
EMULSÕES NUTRICIONAIS CONTENDO ÓLEOS ENCAPSULADOS EM PROCESSO. São reveladas emulsões nutricionais compreendendo gordura, proteína e carboidrato, incluindo de cerca de 0,01% a 5% em peso de um óleo com notas bizarras hidrofóbicas que é encapsulado em processo por um agente de emulsificação tendo um ponto de fusão acima de cerca de 25°C, e maltodextrina tendo um valor DE de cerca de 10 ou menor, em que a relação em peso do agente emulsificante para o óleo encapsulado em processo é de pelo menos cerca de 1:15 e da relação em peso da maltodextrina para o óleo encapsulado em processo é de pelo menos cerca de 1 :2. As emulsões nutricionais mascaram, eficazmente, notas comumente associadas com alguns óleos, por exemplo, ácidos graxos poliinsaturados, óleo de soja, óleos beta-hidróxi-beta-metilbutirato.
