背景技术

高熔点乳化剂
用于本文中的高熔点乳化剂包括任何适用于营养产品的、还具有至少约25℃,优选地约30℃至约75℃,更优选地约45℃至约70℃的熔点的乳化剂。
所选择的乳化剂和具有疏水性气息(off-notes)的油被一起熔化而形成液体,并且将该混合物添加到余下的营养配方(脂肪-碳水化合物-蛋白-矿物质共混物)。所得的共混物然后进行UHT(超高温)热处理和均化。均化将鱼油分为涂布有高熔融温度乳化剂的微细液滴。当这种均化的共混物被冷却到室温以下时,乳化剂固化,因此导致多不饱和脂肪酸的封装(在本文中也称为"工艺封装多不饱和脂肪酸")或其它的具有气息(off-notes)的疏水油(在本文中称为"工艺封装的具有疏水性气息(off-notes)的油")。
选择营养乳液中高熔点乳化剂的量或浓度以便所得的乳化剂与具有疏水性气息(off-notes)的油的重量比为至少1:15,优选地1:10至1:1,包括1:9至1:2,和还包括1:5至1:2。这样的乳化剂浓度最典型地的范围为约2%至约12%,包括约4至约10%,和还包括5至8%,按乳液中全部油的重量计算。然而,应理解的是可以使用甚至更高浓度的乳化剂,特别地当为除封装具有疏水性气息(off-notes)的油以外的目的如为乳液稳定性添加另外的乳化剂时。
合适的高熔点乳化剂包括甘油单酯或多羟基醇的其它单酯,包括甘油的脂肪酸酯。一些合适的用于本文中的高熔点乳化剂的非限制性实例包括GRINDSTED™ ACETEM(甘油单酯的乙酸酯),GRINDSTED™ CITREM(甘油单酯的柠檬酸酯);GRINDSTED™ LACTEM(甘油单酯的乳酸酯);GRINDSTED™ Mono-Di(甘油单酯和甘油二酯);GRINDSTED™ PGE或PGPR(脂肪酸的多甘油酯,多甘油多蓖麻醇酸酯);GRINDSTED™ PGMS(脂肪酸的亚丙基甘油酯);GRINDSTED™ SMS或STS(脱水山梨(糖)醇单硬脂酸酯,脱水山梨(糖)醇三硬脂酸酯);和DIMODAN®蒸馏的甘油单酯;全部可得自Danisco,
Copenhagen, Denmark。
其他适合的高熔点乳化剂包括MYVEROL® 18-99K,蒸馏的甘油单酯,其包括约82%单酰基甘油的共混物(86.6%甘油一油酸酯,7.0%甘油一硬脂酸酯,3.5%甘油一棕榈酸酯,0.9%甘油一花生酸酯,2.0%未经确认的),可获自Kerry

大量营养元素
本发明的营养乳液包括脂肪,蛋白,和碳水化合物大量营养元素。已知的或以其它方式适用于口服营养产品的这样的营养物的任何来源也适于本文中使用,条件是这样的营养物与配方中的所选择的成分不矛盾。

营养乳液包括适用于营养乳液的蛋白来源。适于本文中使用的蛋白或蛋白来源包括水解、部分水解或非水解的蛋白或蛋白来源,并且可以获自任何已知来源或者以其它方式的合适的来源如乳(例如酪蛋白,乳清),动物(例如肉,鱼),谷物(例如稻米,玉米),植物(例如大豆),或其组合。这样的蛋白的非限制性的实例包括乳蛋白分离物,酪蛋白蛋白分离物,乳蛋白浓缩物,全牛乳,部分或完全脱脂乳,大豆蛋白分离物,等等。
任选的成分
本发明的营养乳液可以进一步包括其它任选的组分,其可以改变产品的物理,化学,美学或加工性能或用作药用或另外的营养组分,当用于目标人群时。许多这样的任选的成分是已知的或者以其它方式适用于其它营养产品并且也可以用于本文中的组合物,条件是这样的任选的成分是安全的并且是口服给予有效的而且与所选择的产品形式中的必要和其他成分相适合。
这样的任选的成分的非限制性实例包括防腐剂,抗氧化剂,其它另外的乳化剂,缓冲剂,药用活性物,如本文中所述的另外的营养物,甜味剂,包括人工甜味料(例如糖精,阿司帕坦,丁磺氨钾,三氯半乳蔗糖)着色剂,香料,增稠剂和稳定剂,等等。
本发明的营养乳液可以进一步包括各种其它维生素或相关的营养物中的任一种,其的非限制性实例包括维生素A,维生素D,维生素E,维生素K,维生素B1,维生素B2,维生素B6,维生素B12,类胡萝卜素,烟酸,叶酸,泛酸,生物素,维生素C,胆碱,肌醇,其盐和衍生物,和其组合。
营养乳液可以进一步包括各种其它另外的矿物质中的任一种,其的非限制性实例包括钙,磷,镁,铁,锌,锰,铜,钠,钾,钼,铬,氯化物,和其组合。
制造
本发明的营养乳液可以通过任何已知的或用于制备液体营养物的以其它方式有效的制造工艺来制备,其是根据如下指出的方法改造的以便有效地用高熔点的乳化剂配制工艺封装的具有疏水性气息(off-notes)的油并且然后随后将结合物并入营养乳液中。
营养乳液可以通过下述方式制备:分别地配制水包蛋白浆液(大部分蛋白和水),碳水化合物-矿物质浆液(矿物质,碳水化合物,包括麦芽糖糊精),脂肪包蛋白浆液(蛋白,脂溶性维生素,脂肪)并且然后将这些浆液合并而形成共混物,然后将具有疏水性气息(off-notes)的油/高熔融温度乳化剂添加到该共混物。所得的共混物然后被热处理,均化,用任何水溶性维生素标准化,加调味剂,并且所得的营养乳液最后被杀菌或无菌处理并且填装,使其冷却。
本发明的用于制备营养乳液的方法可以因此包括:
(A)将重量比至少约1:15的熔点高于约25℃的乳化剂和具有疏水性气息(off-notes)的油加热并且共混在一起;和
(C)将加热的共混物添加到脂肪,蛋白,和碳水化合物混合物,后者包括葡糖当量约10或更小的麦芽糖糊精,麦芽糖糊精与具有疏水性气息(off-notes)的油的重量比为至少约1:2;和
(D)将该组合均化并随后冷却到低于乳化剂的熔点而形成包括约0.01wt%至约5wt%的工艺封装的油(或其它具有疏水性气息(off-notes)的油)的营养乳液。
这种特别的方法可以根据涉及如本文中所述的营养乳液实施方案的任何或全部的变体来改变。
实施例
以下实施例举例说明本发明的营养乳液的特定的实施方案。这些实施例仅仅为示例性的目的给出并且不被认为是本发明的限制,因为其许多变化在不背离本发明的精神和范围的情况下是可能的。
如下所述的各个营养乳液是通过分别地配制水包蛋白浆液,碳水化合物和矿物质浆液,和油纤维浆液而制备的。具有疏水性气息(off-notes)的油(例如鱼油)和乳化剂共混物是单独地通过加热并且将两者在足以熔化固体乳化剂的温度下共混在一起而制备的,从而形成加热的液体共混物。所形成的浆液然后被结合而形成单个混合物,此后将鱼油和乳化剂共混物(以加热的液体的形式)添加到该单个混合物中。所得的组合然后被热处理,均化,用任何水溶性维生素标准化,加调味剂,并且所得的营养乳液最后被杀菌或无菌处理并且填装,使其冷却。
用于制备举例说明的实施方案的成分列在下表中。最终的乳液作为多不饱和脂肪酸的饮食来源以每日为基础被口服给予至个体,其数量足以给目标使用者提供唯一或补充的营养物。在使用后的两小时内或中,这些个体未能发觉任何与脂肪酸组分有关的异味(off-flavors)或气味。

Claims (13)
1.
一种包括脂肪,蛋白,和碳水化合物的营养乳液,其包括:
(A) 约0.01wt%至约5wt%的通过熔点高于约25℃的乳化剂工艺封装的具有疏水性气息(off-notes)的油,和
(B) DE约10或更小的麦芽糖糊精,
其中乳化剂与具有疏水性气息(off-notes)的油的重量比是至少约1:15和麦芽糖糊精与具有疏水性气息(off-notes)的油的重量比是至少约1:2。

根据权利要求1的营养乳液,其中具有疏水性气息(off-notes)的油选自多不饱和脂肪酸,大豆油,含β-羟基-β-甲基丁酸酯的油,和其组合。

根据权利要求1的营养乳液,其中具有疏水性气息(off-notes)的油是多不饱和脂肪酸。
4.
根据权利要求3的营养乳液,其中乳化剂与工艺封装的多不饱和脂肪酸的重量比为1:9至1:2并且麦芽糖糊精与工艺封装的多不饱和脂肪酸的重量比为1:1至20:1。

根据权利要求3的营养乳液,其中乳化剂与工艺封装的多不饱和脂肪酸的重量比为1:5至1:2并且麦芽糖糊精与工艺封装的多不饱和脂肪酸的重量比为2.5:1至4:1。
6.
根据权利要求3的营养乳液,其中乳液包括约0.3wt%至约3wt%的工艺封装的多不饱和脂肪酸。
7.
根据权利要求3的营养乳液,其中乳液基本上没有除工艺封装的多不饱和脂肪酸以外的多不饱和脂肪酸。
8.
根据权利要求3的营养乳液,其中乳化剂的熔点为约45℃至约70℃。
9.
根据权利要求3的营养乳液,其中乳化剂是甘油单酯。
10.根据权利要求3的营养乳液,其中多不饱和脂肪酸包括二十碳五烯酸,二十二碳六烯酸,或两者。
11.根据3的营养乳液,其中乳液包括约0.1至约20%的麦芽糖糊精并且麦芽糖糊精的DE为约1至约5。
12.根据权利要求3的营养乳液,其中麦芽糖糊精的DE值为约3。
13.根据权利要求3的营养乳液,其中乳液包括,按总卡路里的百分比计,约10%至约85%碳水化合物,约10%至约85%脂肪,和约5%至约80%蛋白。
