Abstract

La presente invención está dirigida a métodos y composiciones para la elaboración de alimentos para panadería en base a masa -y pasta-, tales como pan y pastel teniendo extremadamente largas vidas útiles de frescura y libres de moho, mediante el uso de un novedoso agente antiadherente antimicrobiano comprendiendo un aceite esencial disperso o disuelto en un portador en base a aceite o grasa, junto con otros agentes antimicrobianos naturales o químicos, enzimas anti envejecimiento y/o sistemas de realce de sabor. La invención está dirigida además a los métodos y composiciones para la preparación de productos de panadería de masa totalmente natural y en base a pasta, tales como pan y pastel teniendo largas vidas útiles libres de moho, mediante el tratamiento de la superficie de la masa, pasta o producto de panadería con el agente antiadherente antimicrobiano, en conjunto con las enzimas anti envejecimiento y conservadores naturales en las formulaciones de masa o pasta. Adicionalmente, la invención se refiere a todos los productos de panadería totalmente naturales teniendo extremadamente largas vidas útiles libres de moho las cuales están sustancialmente libres (tanto internamente como en la superficie exterior) de conservadores químicos y agentes antimicrobianos diferentes al agente antiadherente antimicrobiano totalmente natural y agentes antimicrobianos naturales opcionales dentro de la masa.
