Abstract

En las modalidades preferidas de la presente invención, se proveen productos cárnicos mejorados y métodos para producir estos productos cárnicos por medio de la incorporación incrementada de grasas saludables que contienen ácidos grasos beneficiosos, tales como ácido estearidónico (SDA); además, en diversas modalidades, se proveen métodos para producir estos productos que incluyen pasos tales como la reducción del contenido de grasa saturada mediante la cría y/o empleando técnicas de procesamiento de carne; en algunas modalidades, el producto cárnico terminado tiene un mayor contenido de grasa que el tejido cárnico inicial, con las mejoras correspondientes en el sabor y la textura, y también con beneficios mejorados para la salud del consumidor.
