Abstract

COMPOSIÇÃO DE GORDURA ALIMENTÍCIA, MÉTODO PARA USAR ÁCIDO ESTEARIDÔNICO PARA FORMAR UMA COMPOSIÇÃO DE GORDURA ALIMENTÍCIA, COMPOSIÇÕES ALIMENTÍCIAS, MANTEIGA DE 5 NOZES E MÉTODO PARA USAR ÁCIDO ESTEARIDÔNICO PARA FORMAR UMA MANTEIGA DE NOZES. A presente invenção refere-se a composições e métodos para produzir composições de gordura alimentícia e manteiga de nozes com uma quantidade de ácidos graxos ômega-3 (PUFAs n-3). Especificamente, as composições de gordura alimentícia e manteiga de nozes compreendem uma quantidade de óleo de soja enriquecido com ácido estearidônico (SOA) que transmite qualidade nutricional melhorada com uma quantidade de PUFAs n-3, mas retém a sensação bucal, sabor, odor, e outras características sensoriais associadas com típicas composições de gordura alimentícia e manteigas de nozes.
