Claims (10)
- 조성물의 SOS함량이 적어도 15중량%인 반면에 적어도 5중량%, 바람직하게 적어도 20중량%의 스테아르산을 함유하고 바람직하게 20이하의 요오드값을 나타내는 적어도 0.5중량%의 (H2M+HM2)-지방이 존재함을 특징으로하는 통상의 초콜렛 성분들과 임의로 hardstock성분을 함유하는 적어도 25중량%의 지방으로 이루어진 조성물을 함유하는 초콜렛 조성물.(상기식에서, H는 C16이상, 바람직하게 C16-C18의 포화된 지방산을 의미하고; M은 C8-C14, 바람직하게 Cl2-C14의 포화된 지방산을 의미하며; 5는 C16/C18의 포화된 지방산을 의미하고; O는 올레산을 의미함).
- 제1항에 있어서, (H2M+HM2)-함량이 적어도 0.6중량%, 바람직하게 0.8 내지 2.0중량%임을 특징으로 하는 초콜렛 내용물.
- 제1항에 있어서, (H2M+HM2)-함유 하드스톡이 16개의 탄소수를 가지는 지방산잔기와의 트리글리세리드가 높으며, 라우르산 및/또는 미리스트산 잔기와의 트리글리세리드가 풍부한 식물성기름의 분자간 에스테르화된 혼합물임을 특징으로 하는 조성물.
- 제3항에 있어서, 하드스톡이 경화된 팜유 및 경화된 팜너트유의 분자간 에스테르화된 혼합물임을 특징으로 하는 조성물.
- 제4항에 있어서, 하드스톡이 P-58 및 PK-39 또는 이들의 부분의 분자간 에스테르화된 혼합물임을 특징으로 하는 조성물.
- 제1항에 있어서, 하드스톡이 적어도 35℃의 융점과 2이상의 C12: C14의 몰비를 가짐을 특징으로 하는 조성물.
- 제1항에 있어서, 초콜렛 조성물이 보통 초콜렛 또는 밀크초콜렛으로 제조됨을 특징으로 하는 조성물.
- 제1항에 있어서 언급된 조성을 가지는, 반죽된 초콜렛 조성물.
- 적어도 부분적으로 제8항의 반죽된 조성물을 함유하는 초콜렛-바.
- 제1항에 따른 조성을 가지는 하드스톡을 초콜렛 조성물의 지방내로 혼입시킴을 특징으로 하는 초콜렛 조성물의 블룸을 지연시키는 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
