Claims (9)
- 팥으로부터의 추출 성분을 함유한 건강 음료로서, 상기 추출 성분은 본질적으로 나트륨, 칼슘, 마그네슘, 칼륨, 철, 탄닌 등의 미네랄 성분과 폴리페놀 성분인 것을 특징으로 하는 팥을 원료로 하는 건강 음료.
- 제 1 항에 있어서,상기 추출 성분에 있어서의 칼륨의 함유 비율이 10∼20 mg/100ml, 철의 함유비율이 0.01∼0.05 mg/100ml, 탄닌의 함유비율이 25∼35 mg/100ml인 것을 특징으로 하는 팥을 원료로 하는 건강 음료.
- 제 2 항에 있어서,상기 추출 성분에 있어서의 나트륨의 함유 비율이 0.5∼1 mg/100ml, 칼슘의 함유비율이 1∼2 mg/100ml, 마그네슘의 함유비율이 1∼2 mg/100ml인 것을 특징으로 하는 팥을 원료로 하는 건강 음료.
- 원하는 양의 팥을 세정한 후에 일정한 가열 조건 하에 추출을 행하여 팥에 포함된 미네랄류와 폴리페놀류를 함유한 추출액을 얻고, 상기 추출액을 일정 농도로 희석하여 얻은 조정액을 용기에 충전하여 밀봉하고, 상기 용기를 가열하여 냉각한 후 다시 정치하는 것을 특징으로 하는 팥을 원료로 하는 건강 음료의 제조 방법.
- 제 4 항에 있어서,상기 추출이 80∼100 ℃의 열수에 의한 20∼60 분간의 조건에서의 삶아우려냄에 의해 팥에 포함되는 미네랄 성분과 폴리페놀 성분을 추출하는 동시에 당질, 지질, 단백질 등의 추출을 가급적 방지하는 것을 특징으로 하는 팥을 원료로 하는 건강 음료의 제조 방법.
- 제 4 항에 있어서,상기 추출액의 희석이 나트륨: 0.5∼1 mg/100ml, 칼슘: 1∼2 mg/100ml, 마그네슘: 1∼2 mg/100ml, 칼륨: 10∼20 mg/100ml, 철: 0.01∼0.05 mg/100ml, 탄닌: 25∼35 mg/100ml의 함유비율로 되는 농도 조정 공정임을 특징으로 하는 팥을 원료로 하는 건강 음료의 제조 방법.
- 제 4 항에 있어서,상기 밀폐상 용기의 가열이 110∼130 ℃에서 30∼45 분간의 조건에 의해 상기 용기내의 조정액을 발색시키는 동시에 떫은 맛을 없애서 풍미를 생성하는 공정인 것을 특징으로 하는 팥을 원료로 하는 건강 음료의 제조 방법.
- 제 4 항에 있어서,상기 밀폐상 용기의 정치가 15∼30℃에서 3∼7 일의 조건에 의해 상기 용기내의 조정액의 발색을 더욱 심화하여 풍미를 안정시키는 숙성공정임을 특징으로 하는 팥을 원료로 하는 건강 음료의 제조 방법.
- 원하는 양의 팥을 세정한 후에 80∼100 ℃의 열수에 의한 20∼60 분간의 가열 조건 하에의 삶아우려냄에 의해 팥에 포함되는 미네랄 성분과 폴리페놀 성분을 추출하고, 상기 추출액을 일정 농도로 희석하여 얻은 조정액을 120∼135℃에서 가열한 후 5∼40 분간 유지하고, 상기 조정액을 발색시키는 동시에 풍미를 생성하며, 이어서 냉각한 후에 용기에 충전하여 밀봉하고, 다시 15∼30 ℃에서 3∼7 일의 조건에서 정치하여 상기 용기내의 조정액의 발색을 더욱 심화하는 동시에 풍미를 안정시키는 것을 특징으로 하는 팥을 원료로 하는 건강 음료의 제조 방법.
