Description
スピルリナ粒子等の色素タンパク質複合体粒子の分解温度閾値を測定するために、5バッチの粉末ゼラチンを調製した。粉末ゼラチンは、ゼラチン、甘味料としてのスクロース、pH調整剤としてのリン酸二ナトリウムおよびクエン酸ナトリウム、香味増強剤としてのアジピン酸およびフマル酸、および香味成分を含んでいた。また、粉末ゼラチンは、0.25重量%のスピルリナ粒子も粉末形態で含んでいた。
2種の乾燥粉末ゼラチン組成物を形成した(組成物1および2)。各組成物は、ゼラチン、甘味料としてのスクロース、pH調整剤としてのリン酸二ナトリウムおよびクエン酸ナトリウム、香味増強剤としてのアジピン酸およびフマル酸、および香味成分を含んでいた。また、組成物1は、粉末形態のスピルリナ粒子を0.25重量%含んでいた。組成物2は、粉末形態のスピルリナ粒子を0.15重量%含んでいた。
封入剤中にスピルリナ粒子を封入する効果を評価するために、2種の異なる組成物からペレット状着色剤が形成された。特定の組成物は、以下の表3および4に記載されており、スピルリナ、封入剤としてのコーンシロップ、および乾燥希釈剤としての精製糖(スクロース)を含んでいた。表4のコーンシロップ(43 DE)は、表3のコーンシロップよりも速い溶解速度を有することに留意されたい。
Claims (21)
- 約0.1重量%〜約40重量%の色素タンパク質複合体;および約60重量%〜約99.9重量%の水溶性液状結合剤の均質混合物を含む食品用ペレット状着色剤であり、前記色素タンパク質複合体および前記水溶性液状結合剤の含有割合は、前記色素タンパク質複合体と前記水溶性液状結合剤との合計重量を基準とし、前記水溶性液状結合剤は、液体形態の単糖類、コーンシロップ、ハチミツ、水飴、モラセス、メープルシロップ、アガベ、フルクトオリゴ糖、玄米シロップ、および転化シロップからなる群より選択される少なくとも1種を含み、前記ペレット状着色剤は、初期温度が約95℃〜約100℃である水への溶解速度が2グラム/分未満であることを特徴とする食品用ペレット状着色剤。
- 前記ペレット状着色剤の構成成分が、約2マイクロメートル〜約0.5ミリメートルの範囲内の粒径を有する、請求項1に記載のペレット状着色剤。
- 前記水溶性液状結合剤が、コーンシロップである、請求項1または2に記載のペレット状着色剤。
- 前記ペレット状着色剤の重量に対して約85重量%以下の乾燥希釈剤をさらに含む、請求項1〜3のいずれか1項に記載のペレット状着色剤。
- 前記乾燥希釈剤が、スクロース、マルトデキストリン、グラニュー糖、シクロデキストリン、穀物粉、デンプン、繊維、タンパク質、脂肪、結晶酸、無機塩、緩衝剤、流動化剤、およびゼラチンの少なくとも1つである、請求項4に記載のペレット状着色剤。
- ゼラチン製品を提供するために再構成することができる乾燥粉末状組成物であって、前記乾燥粉末状組成物は粉末ゼラチンおよびペレット状着色剤を含み、前記ペレット状着色剤は色素タンパク質複合体と少なくとも1種の水溶性液状結合剤との均質混合物を含み、前記水溶性液状結合剤が、液体形態の単糖類、コーンシロップ、ハチミツ、水飴、モラセス、メープルシロップ、アガベ、フルクトオリゴ糖、玄米シロップ、および転化シロップからなる群より選択される少なくとも1種を含み、前記ペレット状着色剤は、約95℃〜約100℃の初期温度を有する水への溶解速度が1グラム/分未満であることを特徴とする乾燥粉末状組成物。
- 前記乾燥粉末状組成物が合成着色剤を実質的に含まない、請求項6に記載の乾燥粉末状組成物。
- 前記ペレット状着色剤が、約0.1重量%〜約40重量%の色素タンパク質複合体と、約60重量%〜約99.9重量%の水溶性液状結合剤を含み、前記色素タンパク質複合体および前記水溶性液状結合剤の含有割合が前記色素タンパク質複合体と前記水溶性液状結合剤との合計重量を基準とする、請求項6または7に記載の乾燥粉末状組成物。
- 前記ペレット状着色剤が乾燥希釈剤をさらに含む、請求項6〜8のいずれか1項に記載の乾燥粉末状組成物。
- 前記乾燥希釈剤が、スクロース、マルトデキストリン、グラニュー糖、シクロデキストリン、穀物粉、デンプン、繊維、タンパク質、脂肪、結晶性酸、無機塩、緩衝剤、流動剤、ゼラチン、またはそれらの組み合わせを含む、請求項9に記載の乾燥粉末状組成物。
- 前記ペレット状着色剤が、前記色素タンパク質複合体と前記水溶性液状結合剤との合計重量を基準として約0.1重量%〜約40重量%の色素タンパク質複合体と、前記色素タンパク質複合体と前記水溶性液状結合剤との合計重量を基準として約60重量%〜約99.9重量%の水溶性液状結合剤と、ペレット状着色剤の重量を基準として約0重量%〜約85重量%の乾燥希釈剤を含む、請求項9に記載の乾燥粉末状組成物。
- 少なくとも1種の甘味料をさらに含む、請求項6〜11のいずれか1項に記載の乾燥粉末状組成物。
- 少なくとも1種のpH調整剤をさらに含む、請求項6〜12のいずれか1項に記載の乾燥粉末状組成物。
- 少なくとも1つの香味成分をさらに含む、請求項6〜13のいずれか1項に記載の乾燥粉末状組成物。
- 前記水溶性液状結合剤がコーンシロップを含む、請求項6〜14のいずれか1項に記載の乾燥粉末状組成物。
- 粉末ゼラチン組成物の製造方法であって、粉末ゼラチンをペレット状着色剤と混ぜ合わせることを含み、前記ペレット状着色剤が、約0.1重量%〜約40重量%の色素タンパク質複合体と、約60重量%〜約99.9重量%の水溶性液状結合剤との均質混合物を含み、前記色素タンパク質複合体および前記水溶性液状結合剤の含有割合が、前記色素タンパク質複合体と前記水溶性液状結合剤との合計重量を基準とし、前記水溶性液状結合剤が、液体形態の単糖類、コーンシロップ、ハチミツ、水飴、モラセス、メープルシロップ、アガベ、フルクトオリゴ糖、玄米シロップ、および転化シロップからなる群より選択される少なくとも1種を含み、ペレット状着色剤は、約95℃〜約100℃の初期温度を有する水への溶解速度が2グラム/分未満であることを特徴とする方法。
- 前記方法が、色素タンパク質複合体を水溶性液状結合剤と混合して均質な色素タンパク質複合体混合物を形成し、色素タンパク質複合体混合物からペレットを形成することにより、ペレット状着色剤を形成することを更に含む、請求項16に記載の方法。
- 前記ペレット状着色剤が、ペレット状着色剤の重量を基準として約0重量%〜約85重量%の乾燥希釈剤をさらに含む、請求項16または17に記載の方法。
- 前記乾燥希釈剤は、スクロース、マルトデキストリン、グラニュー糖、シクロデキストリン、穀物粉、デンプン、繊維、タンパク質、脂肪、結晶性酸、鉱物塩、緩衝剤、流動化剤、ゼラチン、またはそれらの組み合わせを含む、請求項18に記載の方法。
- 前記粉末ゼラチン組成物は合成着色剤を実質的に含まない、請求項16〜19のいずれか1項に記載の方法。
- 前記水溶性液状結合剤はコーンシロップを含み、前記ペレット状着色剤は乾燥希釈剤をさらに含み、前記乾燥希釈剤はスクロースを含む。請求項16〜20のいずれか1項に記載の方法。
