Abstract

De conformidad con modalidades, una composición en polvo seca la cual se puede reconstituir para proveer un producto de gelatina incluye gelatina en polvo y un colorante granulado. El colorante granulado incluye un complejo de pigmento-proteína y por lo menos un agente encapsulante para encapsular el complejo de pigmento-proteína. El colorante granulado tiene una velocidad de disolución de menos de 2 g/minuto en agua que tiene una temperatura inicial de aproximadamente 95ºC hasta aproximadamente 100ºC. En otra modalidad, se describe una composición en polvo seca que comprende: gelatina en polvo; y un colorante granulado que comprende: un complejo de pigmento-proteína; y por lo menos un agente encapsulante que encapsula el complejo de pigmento-proteína. Incluso en una modalidad adicional se describe un método para elaborar una composición de gelatina en polvo, el método comprende: mezclar gelatina en polvo con un colorante granulado que comprende: desde aproximadamente 0.1% en peso hasta aproximadamente 40% en peso de complejo de pigmento-proteína tomando como base el peso del colorante granulado; y desde aproximadamente 60% en peso hasta aproximadamente 99.9% en peso de agente encapsulante tomando como base el peso del colorante granulado, en el cual el colorante granulado tiene una velocidad de disolución de menos de 2 g/minuto en agua que tiene una temperatura inicial de aproximadamente 95ºC hasta aproximadamente 100ºC.
