Claims (1)
- 被調理対象物を加熱調理するための調理室と、
水蒸気を発生させるための単一の水蒸気発生器と、
酸性の水とアルカリ性の水とを前記水蒸気発生器に供給するためのpH調整水生成部と、
前記水蒸気発生器において発生させられた水蒸気を過熱して過熱水蒸気を生成するための過熱水蒸気生成ヒータと、
水蒸気と過熱水蒸気を前記調理室に供給するための水蒸気供給チューブと、
前記水蒸気発生器と前記過熱水蒸気生成ヒータと前記pH調整水生成部とを制御するための制御部とを備え、
前記制御部は、
前記単一の水蒸気発生器へ酸性の水またはアルカリ性の水のいずれかを選択的に供給するように前記pH調整水生成部を制御し、かつ、
酸性の水を加熱することによって生成される水蒸気および/または過熱水蒸気を被調理対象物に供給する酸性水調理工程と、
アルカリ性の水を加熱することによって生成される水蒸気および/または過熱水蒸気を被調理対象物に供給するアルカリ性水調理工程を備え、
前記酸性水調理工程と前記アルカリ性水調理工程のいずれか一方を行った後に、他方の調理工程を行って加熱調理器内と被調理対象物との表面を中和させる、加熱調理器における調理方法を行なうように前記水蒸気発生器と前記過熱水蒸気生成ヒータと前記pH調整水生成部とを制御する、加熱調理器。
