Abstract
Description
68%OP、すなわち、96%(v/v)のENA(特級中性アルコール)1リットルにサフラン1gm〜5gmを添加することにより、サフラン濃縮物を調製する工程、
上記ENAとサフランとの混合物を18時間〜36時間、断続的に攪拌する工程、
香り、色、及び風味を有する精油を抽出する工程、
上記サフランとENAとの混合物を濾過してサフラン濃縮物を得る工程、
室温で脱塩水を添加することにより、上記濃縮物を68%OPから9〜45%に希釈する工程、
約5%〜15%の食品用ホワイトミルククリームを添加して適切に混合する工程、
約5%〜20%の食品用糖を添加して糖が溶解するまで混合する工程、
約1%〜5%の食品用香料を添加して十分に混合し、濾過してサフランクリームリキュールを得る工程、
を含む、サフランクリームリキュールの製造方法に関する。
Claims (6)
- サフランクリームリキュールの製造方法であって、
68%OP、すなわち、96%(v/v)のENA(特級中性アルコール)1リットルにサフラン1gm〜5gmを添加することにより、サフラン濃縮物を調製する工程、
前記ENAとサフランとの混合物を18時間〜36時間、断続的に攪拌する工程、
香り、色、及び風味を有する精油を抽出する工程、
前記サフランとENAとの混合物を濾過して前記サフラン濃縮物を得る工程、
室温で脱塩水を添加することにより、前記濃縮物を68%OPから9〜45%に希釈する工程、
約5%〜15%の食品用ホワイトミルククリームを添加して適切に混合する工程、
約5%〜20%の食品用糖を添加して糖が溶解するまで混合する工程、
約1%〜5%の食品用香料を添加して十分に混合し、濾過してサフランクリームリキュールを得る工程を含む、サフランクリームリキュールの製造方法。 - 前記濃縮物93.75mlを脱塩水906.25mlと混合することにより、9%の前記濃縮物を得る、請求項1に記載の方法。
- 前記サフランクリームリキュールを、ガラス又は鋼製の無菌ジャーに15℃で貯蔵する、請求項1に記載の方法。
- 前記香料が天然のものである、請求項1に記載の方法。
- 請求項1〜4に記載の方法により製造されるサフランクリームリキュール。
- 本明細書に記載の方法と実質的に同等のサフランクリームリキュールの製造方法。
