Abstract
A találmány tárgya állománymódosító kompozíció, amely állománymódosítóanyagot és kemény vázanyagot tartalmaz, és az állománymódosítókompozíció lényegében ugyanolyan fizikai tulajdonságokkal rendelkezik,mint a kemény vázanyag. Az állománymódosító anyag egy vagy többszterin-zsírsav-észtert, egy vagy több szta- nol-zsírsav-észtert vagyezek keverékeit tartalmazza, és az állománymódosító kompozíciólegalább 40% állománymódosító anyagot tartalmaz. A találmány tárgyatovábbá zsírkeverék, amely ugyanilyen állománymódosító kompozíciótvagy annak állománymódosító anyagát tartalmazza. A találmány tárgyatovábbá ilyen zsírkeveréket tartalmazó élelmiszer-ipari termék. Atalálmány további tárgya eljárás zsírkeveréket tartalmazó élelmiszer-ipari termék állományának megőrzésére, amelynek lényege, hogy azsírkeverékbe az említett fajtájú állománymódosító anyagot juttatják.A találmány tárgyát képezi továbbá az ilyen eljárással előállítottélelmiszer-ipari termék is. A találmány kiterjed továbbá zsírkeverékettartalmazó élelmiszer-ipari termékek tápértékének és/vagyegészségmegőrző értékének növelésére, valamint a benne levő felszívódózsír mennyiségének csökkentésére irányuló eljárásra.
